- 1/4 cup bourbon
- 1/8 teaspoon minced garlic (4 cloves)
- 1/8 teaspoon ginger

- 1/2 teaspoon cornstarch
Sweet Potato Empanadas

Melissa came up with this recipe as a new way to use up Thanksgiving leftovers
- 1/2 cup sweet potatoes, mashed or pureed
- 1/4 cup cream cheese, softened
- 1 tablespoon brown sugar*
- 1 tablespoon fresh lemon juice
- Kosher salt
- 1 tube refrigerated ready-made crescent rolls
- (uncooked dough)
- 1/3 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 cup butter, melted
- 3/4 cup plain yogurt
- Cook's Note: Omit the brown sugar if the sweet potato leftovers are already sweetened.

Cheddar Chicken and Potatoes

- 4 small boneless skinless chicken breast halves (1 lb.)
- 4 cups (1 lb.) frozen diced potatoes with peppers and onions, thawed

Brock’s Peanut Butter Pie

Brock wanted this recipe after having it at King's Food Host in Minot so I worked at it until I came up with this
- 1 (9-inch) baked and cooled pie crust
- 8 oz. cream cheese, softened
- 1 can sweetened condensed milk
- 3/4 cup peanut butter
- 1 teaspoon vanilla
- 1 (8 oz) frozen whipped topping, thawed

1.Preheat a deep fryer (or a large stockpot filled with oil) to 365°F

- 2 Tbsp baking powder
- 3/4 tsp kosher salt

- 1/8 tsp ground nutmeg
- 1/8 tsp ground allspice

- 1-1/8 cup pumpkin purée
