Mashed Cauliflower

This is just a base recipe that shows you how to bring it together
- 1 large head of cauliflower (mine was so large I had to food process in 2 separate batches, if yours is smaller you can reduce the other ingredients)
- 4 tbsp butter
- 4-6 tbsp extra virgin olive oil
- 2 tsp sea salt
- fresh grated Parmesan (optional)
Cranberry-Orange Cheesecake Recipe

This cheesecake was so incredibly delicious
- Crust
- 1 9-ounce box chocolate wafer cookies, crumbled
- 2 ounces bittersweet or semisweet chocolate, grated
- 5 tablespoons unsalted butter, melted
- dash of cinnamon
- Filling
- 4 8-ounce packages cream cheese, room temperature (about 900g)
- 1 cup sugar (200g)
- 3 tablespoons all purpose flour
- 4 large eggs
- grated peel from 2 oranges
- 1 teaspoon vanilla extract
- 1-2 tablespoons orange liqueur (like Grand Manier) or brandy
- Topping
- 1/2 cup sugar (100g)
- 3 tablespoons water
- 1 teaspoon cornstarch dissolved in 1 tablespoon water
- 2 1/2 cups fresh cranberries (500-600g)
- 1/2 teaspoon grated orange peel
- 1-2 tablespoons Cranberry liqueur (optional)

- 2 medium shitake mushrooms – sliced
- 2-3 about 2-3 tbsp diced onion
- 1 small baby bok choy – chopped
- 1 1/2 tbsp white wine
- dash of sea salt and pepper
- 3 tbsp water
- 1/3 about 1/3 c cooked brown rice
- 1/3 about 1/3 c cooked black eyed peas or other beans
Chocolate Mint Candies Cookies

They are fairly easy to make and are a perfect combination of chocolate and mint
- Ingredients
- (Makes about 24 - 30 cookies)
- 3/4 cup butter (170g)
- 1 1/2 cups brown sugar (220g) (read my note below)
- 2 tablespoons water (30ml)
- 2 cups semisweet chocolate chips/baking chocolate (335g)
- 2 eggs
- 2 1/2 cups all-purpose flour (310g)
- 1 1/4 teaspoons baking soda (6g)
- 1/2 teaspoon salt (3g)
- 3 (4.5 ounce) packages chocolate covered thin mints such as After Eights (378g)
- Note: The only changes that I made from the above recipe is that I reduced the sugar in half because I found it way too sweet, and added a few teaspoons of brandy to the batter.
