Berry Cream Cheese Pie

Blend powdered sugar and cream cheese until smooth
- Sauce:
- 1/2 c. powdered sugar
- 8 oz chream cheese
- 1 1/2 - 2 c. Cool Whip
- 9 " graham cracker crust
- 1 c. berries (blueberries, strawberries, raspberries, etc.)
- 2/3 c. water
- 1 c. sugar
- 3 T. cornstarch
Mommy's Oyster Stuffing

This oyster stuffing is easy to prepare, and perfect for any special occasion
- 1 bay leaf
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1/4 cup butter
- 6 cups dry bread cubes
- 1 tablespoon parsley
- 2 eggs, beaten
- 1 pint oysters, chopped
- 1 teaspoon poultry seasoning
- 1 teaspoon salt
- Dash pepper
- Milk
Fried Chicken Coating

- 2 1/2 c. flour
- Salt and pepper
- Rosemary
- Thyme

W.W. Fruit Kabobs and Yogurt Dip

Place fruit onto skewers. If using plain yogurt, flavor with vanilla and Splenda
- 3 c. cut or whole mixed fruit (melon, berries, peaches, nectarines, plums, apples, pears, grapefruit, oranges, tangerines, kiwi)
- 8 skewers
- 3 c. sugar free or plain fat-free yogurt
- 1 t. vanilla
- Splenda
Cookies and Cream Cheesecake Squares

Place 30 cooies in food processor, finely grind
- 30 Oreos
- 1/4 c. butter or margarine, melted
- 4 pkg (8 oz) cream cheese, softened.
- 1 c. sugar
- 1 t. vanilla
- 4 eggs
- 20 oreos, chopped, divided
Lasagna

Warm oil in large saucepan, soften garlic, onion, and rosemary in hot oil
- 2 T. olive oil
- 4 clove garlic, minced
- 1 large onion
- 1 lb. hamburger (low fat, use turkey burger)
- 3 c. hot water
- 3 sprigs fresh rosemary, chopped fine
- 12 oz. tomato paste
- 1 lb. lasagna noodles, cooked
- 1/2 lb. cottage cheese
- 1/2 lb. ricotta cheese
- 1 lb. mozarella cheese
- 1/2 lb. cojack cheese
Bonnie's Pistachio-Pineapple Delight

pour pineapple and juice into bowl
- 1 can (20 oz.) crushed pineapple in juice
- 1 package (4-serving size) Sugar Free (or regular) Jello Brand pistachio flavor instant pudding and pie filling
- 1 3/4 c. cool whip
- 1/3 chopped nuts
Barilla Angel Hair with Tomatoes, Basil and Parmesan Cheese

Heat olive oil. Add garlic and saute until golden
- 1 box Angel Hair Pasta, cooked.
- 3 T. Olive Oil
- 1 clove garlic, grated
- 1 28-oz Italian Plum Tomatoes, cubed.
- 1/2 t. crushed red pepper flakes
- 1 T. parsley, chopped
- 3 T. basil, chopped
- 1/2 c. Parmesan cheese
Rachel Ray's Chicken with Wild Mushroom and Balsamic Cream Sauce

Heat a large pot of water to a boil
- Salt
- 1/2 pound orzo pasta
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 4 boneless, skinless chicken breasts, 6 ounces
- Pepper
- 2 tablespoons butter
- 12 cremini or baby portobello mushrooms, sliced
- 12 shiitake mushrooms, stems removed and sliced
- 12 white mushrooms, sliced
- 2 large cloves garlic, chopped
- 1 tablespoon thyme leaves, a couple of sprigs, chopped
- 2 large shallots, thinly sliced
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken stock
- 1 tablespoon balsamic vinegar, eyeball it
- 3 tablespoons heavy cream or half-and-half, a couple turns of the pan
- 1/4 cup chopped flat-leaf parsley, a generous handful
