Bonnie's Meat Loaf

Bonnie's Easy Corn Bread

- 1 1/4 c. flour
- 3/4 c. corn meal
- 1/4 c. sugar
- 2 t. baking powder
- 1/2 t. salt (optional)
- 1 c. skim
- 1/4 c. oil
- 2 egg whites OR 1 egg, beaten
- 1 c. fresh or frozen blueberries (optional -- fold in at end)

- 1/2 small red onion, very thinly sliced
- 2 lemons, juiced
