Sausage Italian Soup [Kathy's Favorite]

Saute sausage, add minced garlic
- 1 lb. Sweet sausage
- 2/3 C. Orzo
- 1 can Navy beans
- 1 can Diced tomatoes
- 3 can Beef broth
- 1 pkg Frozen spinach
- 5 clov Garlic
- Pepper
Stuffing with Brie and Artichokes

1/2 stick butter, olive oil
- 1 Stick butter divided
- 1 T Olive oil
- 1 can Marinated artichoke hearts
- 2 C Onions, chopped
- 1 C Celery, chopped
- 1/4 C Parsley, chopped
- 2 T Sage, chopped
- 2 T Thyme
- 5 oz baby spinach
- 6 C Croissants, 1 inch Cube or ciabatta
- 1 Egg
- 3/4 C Chicken broth
- 6 oz Brie
Scallops, Spinach Orzo, Balsamic Tomatoes

Oven 400, roast tomatoes in 1 T olive oil about 15 min
- 1 Pint grape tomatoes
- 3 . T oilve oil
- 1 1/2 . t balsamic vinegar
- 1 1/2 . C. Orzo
- 2 . Garlic cloves sliced thin
- 5 . Oz. Baby spinich
- 16 sea scallops in 2 T oiive oil
- Salt/pepper for scallops, sauce orzo
Meatloaf

350 oven. combine all ingredients
- 3/4 C Onion
- 5 Large white mushrooms
- 2 lb Beef, ground
- 1/2 C Ketchup
- 1/2 C Dijon
- 2 Eggs, beaten
- 1 C bread crumbs
- S & P
Lobster with linguine

Chop lobster. Saute Tomatoes, chille, garlic and butter until soft
- 2 . Lb. Lobster, chopped
- 1 . Lb. Cherry tomatoes, diced
- 1 . Jalapino
- 2-3 . Green onions
- 2 . Garlic
- 4 . Tb. Butter
- S & P
- 1 . C. White wine
- 1 . Lb. Linguine
- 1 . T. Olive oil
- 1/3 C. Cream
- 1/2 C. Basil chopped
- Parmesam, shaved
Spinich Smoothie

- 1 . Frozen banana
- 1 . T peanut butter
- 1/2 . C. Vanilla greek yogurt
- 1 . C. Unsweetened vanilla almond breeze
- 4 . C. Baby spinach
Zucchini Fritters

Salt grated zucchini. Weight zucchini with plate and drain, 30 min
- 1 lb zucchini, grated
- 2 tsp kosher salt
- 1/2 C Parsley
- 1/2 C Romano, grated
- 1/2 C Bread crumbs
- 1 medium onion
- 2-3 Garlic, minced
- 1 Egg, beaten
- Pinch Cayenne
- S & P
Quiche

Oven 375 Bake assembled quiche 35-40 minutes at altitude Spread bacon/cheese in crust
- 1 9" pie crust, cooked
- 8 oz Bacon, 1/2 dice, cooked crisp
- 2 Eggs
- 2 Egg yolks
- 1 C Milk, whole
- 1 C Cream
- 1/2 t salt
- 1/2 t pepper, white
- Pinch Nutmeg
- 4 oz Gruyere, grated (1/2 C)
Scallops with Rice Pilaf

For Pilaf: Saute onions/mushrooms in oil 3 min
- 1 t Olive oil
- 1/2 C Onion, chopped
- 1/2 C Mushrooms, sliced
- 1/2 C Rice, long grain
- 1 C Chicken broth
- 1/4 t saffron
- 1 C Peas, frozen
- 2 T Parmemsean cheese
- 3/4 lb Scallpos
- 2 t Olive oil
- 1/2 T Flour
- 1/2 C vermouth
- 1/2 C chicken broth
- 2 T cream
- S & P
Yorkshire Pudding

Ingredients must be at room temp or they will not puff Sift into bowl flour and salt Stir in milk
- 7/8 C Flour
- 1/2 t Salt
- 1/2 C Milk
- 2 Eggs
- 1/2 C Water
