Ingredients

  • 1 Pint grape tomatoes
  • 3 . T oilve oil
  • 1 1/2 . t balsamic vinegar
  • 1 1/2 . C. Orzo
  • 2 . Garlic cloves sliced thin
  • 5 . Oz. Baby spinich
  • 16 sea scallops in 2 T oiive oil
  • Salt/pepper for scallops, sauce orzo

Preparation

Step 1

Oven 400, roast tomatoes in 1 T olive oil about 15 min.
Food processor with vinegar and 2 T oil. Pulse until coarse, add S & P.

Cook orzo. Saute garlic in oil about 3 min. Add rinsed spinich stir about 2 min. Add orzo. S & P.

Saute scallops 2 min side. S & P.

serve scallpos over orzo, top with sauce
