Italy - Tomato Ciabatta with Olives and Onions

1. In a large skillet, heat 3 tablespoons of the olive oil
- 5 tablespoons extra-virgin olive oil
- 2 large yellow onions, coarsely chopped
- 2 tablespoons tomato paste
- 1/2 teaspoon crushed red pepper
- 1/2 cup pitted kalamata olives, quartered
- 1/2 cup cherry or grape tomatoes, quartered
- Kosher salt
- Pepper
- Three 1/4-ounce packages active dry yeast
- 1 teaspoon sugar
- 1 3/4 cups warm water
- 2 1/2 cups all-purpose flour, plus more for shaping
- 3/4 cup fine semolina
Italy - Spinach Artichoke w Greek Yogurt Dip

STEP 1 Heat olive oil in a medium pot over medium heat
- 2 tablespoons olive oil
- 1 large garlic clove, finely chopped
- 1 12-ounce 12-ounce bunch fresh spinach, finely chopped (or 1 10-ounce package frozen spinach, defrosted, drained and finely chopped)
- Pinch crushed red pepper flakes (optional)
- Kosher salt and black pepper
- 1 (14-ounce) can quartered artichoke hearts, drained and coarsely chopped
- 8 ounces cream cheese, cut into 1-inch pieces
- 4 ounces fresh mozzarella, torn or shredded
- 4 ounces sour cream or full-fat Greek yogurt
- ¼ cup pecorino Romano or Parmesan cheese, finely grated
Thai - One Pot Wonder Peanut Pasta

Place all ingredients except cilantro and lime juice and garnishes in a large stockpot
- Add at the end of cooking:
- 12 ounces linguine
- 4 cups vegetable broth
- 1/2 cup water
- 1 tablespoon brown sugar
- 4 cloves garlic, thinly sliced
- I tablespoon tamarind paste
- 1 tablespoon soy sauce (and/or fish sauce, if desired)
- 1/2 teaspoon red pepper flakes
- 2 inches of a ginger root, sliced into 1/4 inch slices
- 1 large carrot, peeled and cut in 1/4 inch by 2 inch pieces
- 1 red bell pepper, cut in 1/4 inch by 2 inch pieces
- 3 green onions, sliced in half lengthwise and then in 2 inch pieces
- 1 cup roasted salted peanuts, chopped
- 2 tablespoons peanut butter
- One small bunch of cilantro, diced (flat leaf parsley will work in a pinch)
- Juice of one lime
- Optional garnishes:
- Chopped peanuts
- Mung bean sprouts

- 16 oz cream (recipe called for 32 but I think it's too much)

N.Africa - Green Beans & Carrots in Charmoula Sauca

Add a few inches of water to a steamer (or large pot with a steamer insert) and bring to a boil
- 1 lb. French-style green beans, ends trimmed
- 1/2 lb. carrots, trimmed into sticks the same thickness and size as beans
- 1 large clove garlic, slightly chopped
- 1 cup coarsely chopped cilantro
- 1/2 cup coarsely chopped flat leaf parsley
- 3 T extra-virgin olive oil
- 2 T lemon juice (I use my fresh-frozen lemon juice)
- 1/4 - 1/2 tsp. hot or smoked paprika
- 1/4 - 1/2 tsp. ground cumin
- salt and fresh ground black pepper to taste
