- 1/2 c. grated sharp white cheddar
- 1/2 c. Gruyère

- For the boiled shrimp:
- 1/2 cup kosher salt
- 1/4 cup sweet paprika

- 1/4 cup fresh lemon juice
- 4 bay leaves
- 1 small onion, sliced 1/4 inch thick

- For the remoulade sauce:
