Danish Carrot Cake (Dansk Ostekage)

Although the name literally translates as "cheesecake," this cake is golden with shredded carrots and is topped wit
- 1/4 cup melted butter
- 1/4 cup sugar
- 1/4 cup finely shredded, pared carrot
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 eggs
- 2 tablespoon aquavit or vanilla
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 cup golden or dark raisins
- FROSTING
- 1/4 cup butter, at room temperature
- 3 ounces cream cheese, at room temperature
- 1 cup powdered sugar
- 1/2 cup slivered or sliced almonds, toasted
Stone-Ground Cornbread

Preheat the oven to 375 degrees
- 1 1/4 cup yellow stone-ground cornmeal
- 3 Tbsp. unsalted butter, melted
- 3/4 tsp. salt
- 3/4 cup all-purpose flour
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1 cup whole milk
- 1 egg
Chicken in Garlic Sauce - Pollo al Ajillo

I use chicken thighs - they won't dry out during cooking
- 12 large chicken thighs (about 4 pounds)
- sea salt or kosher salt
- black pepper
- 1/4 cup canola oil
- 10 cloves of garlic, sliced
- 2 teaspoons chopped fresh thyme leaves
- 1/2 cup dry sherry
- 1/2 cup chicken broth

- 2 tablespoons minced fresh basil
- 1 tablespoon minced fresh parsley
- 1 teaspoon finely grated lemon zest

Strawberry Topping

- 2 pounds fresh strawberries, cleaned, hulled, and cut lengthwise into 1/4-to 1/8-inch slices
- 1/2 cup granulated sugar
- pinch table salt
- 1 cup strawberry jam (about 11 ounces)
- 2 tablespoons lemon juice from 1 lemon

- 2 pints fresh strawberries rinsed, hulled, and sliced
- 1 pint fresh raspberries
- 1/2 pint fresh blueberries
