- 1 to 3 cups vegetable or corn oil, for frying
- 1 1/4 cups yellow cornmeal
- 3/4 cups unbleached all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/2 teaspoon baking soda
- 1/4 to 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter, melted
- 1 cup buttermilk
- 1 large egg
- 1/2 cup finely chopped onion or scallions
- 1/4 cup finely chopped bacon, or
- 1/4 cup shredded cheddar
