- 1 1/3 to 1 1/2 cups lukewarm water*
- 1 heaping tablespoon honey
- 2 1/4 teaspoons instant yeast
- 1 3/4 teaspoons salt
- 2 tablespoons soft butter
- 4 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup Baker's Special Dry Milk or 1/2 cup nonfat dry milk granules
- Use the lesser amount in summer or humid climates; the greater amount in winter or drier climates.
Grilled Stuffed Chicken Breasts with Prosciutto and Fontina

You can serve the chicken on the bone, but we prefer to carve it off and slice it before serving
- 4 bone-in, skin-on chicken breast halves (about 12 ounces each), trimmed of excess fat and skin
- Table salt
- Vegetable oil for cooking grate
- 4 tablespoons (1/2 stick) unsalted butter, softened
- 1 medium shallot, minced (about 3 tablespoons)
- 4 teaspoons chopped fresh tarragon leaves
- 2 ounces fontina cheese, rind removed, cut into four 3 by 1/2-inch sticks
- 4 thin slices prosciutto (about 2 ounces)
- Ground black pepper
Lebanese Chickpea Salad

Chickpeas, also called garbanzos are really more bean than pea
- 2 cups cooked chickpeas, or drained canned chickpeas (I doubled this)
- 1 teaspoon ground sumac (I love the tang of sumac and used 3 tbsp)
- 1 small garlic clove, peeled and crushed (finely diced, mainly because our garlic press is in storage)
- 2 tablespoons dried spearmint (I used 1 tbsp of fresh mint, chopped)
- 2 tablespoons fresh lemon juice, or more to taste (in my version, 3 tbsp)
- 1 tablespoon red wine vinegar (after tasting and adjusting, I ended up with 3 tsbp)
- 3 tablespoons olive oil (this was perfect, after doubling the chickpeas and making the above adjustments)
- salt to taste

- 3 pounds bone-in, skin-on chicken breast halves, trimmed of excess fat and skin
