- Green Velvet Cake:
- 2 1/2 cups all-purpose flour
- 2 tablespoons cocoa powder
- 1/2 teaspoon salt
- 1 1/2 cups canola or vegetable oil
- 1 1/2 cups granulated white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- 1 cup buttermilk
- 2 tablespoons (1-ounce bottle) green food coloring
- Frosting:

- 1/2 cup unsalted butter, at room temperature

Directions: Vigorously whisk together egg whites, vanilla, and half of powdered sugar in small bowl
- 1/4 cup Food You Feel Good About Liquid Egg Whites (Pasteurized)
- 1 tsp Wegmans Pure Vanilla Extract
- 4 cups Wegmans Powdered Sugar, sifted
Shrimp Sandwich Spread

- 1/4 C cream
- 13 oz cream cheese
- 1 Tbsp catsup
- 1 tsp mustard
- 2 Tbsp Miracle Whip
- Dash of garlic
- 1/4 C finely chopped celery
- 1 tsp finely chopped onion
- 1 - 2 cans small shrimp - drained and rinsed
- Tabasco if desired
Tomatillo Dressing (Costa Vida)

- 1 pkg Hidden Valley Buttermilk Ranch dressing mix
- 1 C buttermilk
- 1 C mayo
- 1 - 2 tomatillos
- 1/2 - 1 clove garlic
- 1/2 - 1/3 bunch cilantro chopped fine
- 1/2 tsp lime juice
- 1/2 - 1 small jalapeño seeds removed
Key Lime Cake

Prepare 3 round 9 inch pans by lining the bottoms of each with 9"circles of wax paper
- 1 box of lemon cake mix
- 1 3-oz. box of lime jello
- 1/3 C. vegetable oil
- 3 eggs
- 1/2 C. orange juice
- 3/4 C. water
- 1 box pd. sugar
- 1/4 C. key lime juice (bottled)
- 1/4 C. key lime juice (fresh)
- 8 oz. cream cheese (softened)
- 1 cube butter (softened)
- 1 tsp. vanilla
Tristi's Gazpacho

- 2/3 cups olive oil
- 1/3 cup rice vinegar
- 1 tsp. salt
- 2 cucumbers
- 1/2 onion
- 1 red or yellow or bellpepper
- 4 tomatoes
- 1 clove garlic
Apple Pie Filling

I like to cook the apples a little in a frying pan until they start to be translucent
- 1/3 C. brown sugar
- 1/3 C. white sugar
- 2 Tbsp. lemon juice
- 3 Tbsp. cornstarch
- cinnamon and nutmeg
- pinch of salt

Aunt Margaret's Icing

Boil the first 2 ingredients for a few minutes
- 9 Tbsp. sugar
- 4 Tbsp. water
- 2 egg whites
- 1 lb. and 1 cup powdered sugar (sifted)
- 1 C. Crisco
- Almond flavoring

Zucchini Bread

Mix together and bake in 2 large or 3 smaller loaf pans that have been greased well
- 3 eggs
- 1 C. oil
- 1 C. white sugar
- 2 C. peeled and grated zucchini
- 3 tsp. vanila
- 3 C. sifted flour
- 1 tsp. salt
- 1 tsp. B. soda
- 3 tsp. cinnamon
- 1/4 tsp. B. powder
- 1/2 C. nuts (optional)
German Chocolate Cake Icing

Cook the first 5 ingredients over low heat until it thickens
- 1 C. evaporated milk
- 1/2 C. butter
- 1 C. sugar
- 1 tsp. vanilla
- 3 egg yolks
- 1 1/3 C. coconut
- 1 C. pecans chopped
