- For Sauce:

- 4 lbs or more lean brisket
- 2 lg. onions, sliced
- 3 lg. onions, diced
- 2 cloves garlic, minced
- 1 c. catsup
- 1/2 c. vinegar
- 1 tsp. dry mustard
- 6 Tbsp. brown sugar
- 2 cans beef broth
- 2 tsp. Worcestershire sauce
Hazelnut-Almond Dacquoise

- 1/2 cup blanched whole hazelnuts, plus 3/4 cup sliced almonds, toasted
- 1/2 cup blanched whole almonds, plus 1/4 cup blanched whole hazelnuts, toasted
- 1-1/3 cups confectioners’ sugar
- 1/8 tsp. kosher salt
- 6 egg whites
- 1/3 cup granulated sugar
- For the bittersweet chocolate ganache
- 1 lb.semisweet or bittersweet chocolate, chopped
- 2 cups heavy cream
- For the espresso buttercream
- 3/4 cup granulated sugar

Puffy Chicken Tacos

Corn or flour tortillas that are deep-fried until they puff are a specialty of San Antonio's Tex-Mex cuisine
- 1⁄4 cup olive oil
- 2 1⁄2 lb. bone-in, skin-on chicken thighs
- 6 cloves garlic, finely chopped, plus 2 cloves minced
- 1 medium yellow onion, finely chopped
- 1 rib celery, finely chopped
- 1 small carrot, finely chopped
- 1 small red bell pepper, finely chopped
- 3 cups chicken stock
- 1 (14 oz.) can whole peeled tomatoes in juice, crushed by hand
- 2 avocados, pitted, peeled, and mashed

- 17.62 oz. (4 cups) unbleached all-purpose flour
- 1 ⁄3 cup sugar, plus more for coating the doughnuts

- 1 12-ounce beer
- 1 pound new potatoes
- 1 to 2 quarts vegetable oil
- 2 tablespoons sliced garlic
- 2 teaspoons cumin seeds
- 2 teaspoons fennel seeds
- 1 teaspoon Sichuan peppercorns, roughly chopped
- 1 star anise, left whole
- 2 dried chiles, minced
- 1 1/2 tablespoons Sichuan hot bean sauce
