Brocolli Casserole

- 3/4 lb. Velveeta™ cheese, cubed
- 2 small boxes frozen chopped broccoli
- 1 cup cooked minute or brown rice
- 1 onion, chopped
- 1 stick butter
- 1 can cream of chicken soup
- 1/2 cup milk
Whole Wheat Potato Rolls

Bring 3/4 cup whole milk and 3/4 cup water to simmer in small saucepan
- 3/4 cup whole milk
- 3/4 cup water
- 1/4 cup (1/2 stick) unsalted butter, room temperature
- 3 cups (or more) white whole wheat flour* or regular whole wheat flour
- 3/4 cup instant mashed potato flakes
- 1/4 cup nonfat dry milk powder
- 3 tablespoons sugar
- 2 1/4 teaspoons quick-rising active dry yeast (from two 1/4-ounce envelopes)
- 1 1/4 teaspoons salt
- 1 large egg yolk
- 1 large egg white, whisked with 1 tablespoon water (for glaze)
- 3 to 4 tablespoons quick-cooking oats
Hillbilly Spaghetti Pie

- 1 bunch green onions, chopped
- 2 tablespoons olive oil
- 1/2 pound extra lean ground beef
- 1/2 pound Italian sausage, 4 links (sweet or hot) casings removed
- 4 garlic cloves, minced
- 3 tablespoons minced fresh parsley
- 1 (28 ounce) can crushed tomatoes
- 1/4 teaspoon red pepper flakes (I add two more pinches to give it a kick!)
- 1/4 teaspoon dried oregano
- 1 teaspoon salt (or to taste)
- 2 cups water
- 8 ounces spaghetti, broken into 3 inch pieces (I used half of a 16 ounce package–Thin spaghetti–not Angel Hair– but you can use regular )
- 1/4 cup heavy whipping cream
- 4 tablespoons chopped fresh basil
- 1/2 cup fresh grated Parmesan cheese
- 2 cups grated mozzarella cheese
Pretzel Strawberry Salad

1Preheat oven to 350 degrees
- 1 1/2 cups thin pretzels, crushed (crush them before you measure)
- 3 tablespoons sugar
- 1/2 cup butter, melted
- 8 ounces light cream cheese
- 12 ounces Cool Whip (light or fat free is fine)
- 3/4 cup sugar
- 2 cups boiling water
- 1/2 cup cold water
- 6 ounces strawberry Jell-O gelatin dessert
- 20 ounces strawberries, sliced (fresh or frozen, I used closer to 10 oz)

- 2 - large Granny Smith apples, peled, cored, finely chopped
- 1 tablespoon - lemon juice
- 2 cups - all-purpose flour
- 1 teaspoon - baking soda
- 1 teaspoon - baking powder
- 1/2 teaspoon - salt
- 2 teaspoons - ground cinnamon
- 4 - large eggs
- 1 cup - vegetable oil
- 1 cup - Domino® Organic Light Agave Nectar
- 3/4 cup - dried cranberries, coarsely chopped or whole
- 3/4 cup - unsalted pistachios, shelled and coarsely chopped
Chicken Pot Pie (Ina Garten)

Preheat the oven to 350 degrees F
- For the pastry:
- Ingredients
- 3 whole (6 split) chicken breasts, bone-in, skin-on
- 3 tablespoons olive oil
- Kosher salt
- Freshly ground black pepper
- 5 cups chicken stock, preferably homemade
- 2 chicken bouillon cubes
- 12 tablespoons (1 1/2 sticks) unsalted butter
- 2 cups yellow onions, chopped (2 onions)
- 3/4 cup all-purpose flour
- 1/4 cup heavy cream
- 2 cups medium-diced carrots, blanched for 2 minutes
- 1 (10-ounce) package frozen peas (2 cups)
- 1 1/2 cups frozen small whole onions
- 1/2 cup minced fresh parsley leaves
- 3 cups all-purpose flour
- 1 1/2 teaspoons kosher salt
- 1 teaspoon baking powder
- 1/2 cup vegetable shortening
- 1/4 pound cold unsalted butter, diced
- 1/2 to 2/3 cup ice water
- 1 egg beaten with 1 tablespoon water, for egg wash
- Flaked sea salt and cracked black pepper
Cinnamon Popcorn

Pop popcorn. Boil butter, sugar, cinnamon and salt for 1 minute

- 1 stick butter
- 1/2 c. sugar
- 2 tsp. cinnamon
- 1/2 tsp. salt

- 1 sleeve saltine crackers
- 8 tablespoons butter
- 2 cups celery, chopped
- 1 large onion, chopped
- 7 cups chicken stock
- 1 teaspoon salt
- Freshly ground black pepper
- 1 teaspoon sage (optional)
- 1 tablespoon poultry seasoning (optional)
- 5 eggs, beaten

- 1 1/4 cups sugar
- 3 tablespoons flour
- 4 eggs, whisked
- 1 cup buttermilk
- 1 1/2 teaspoons vanilla
- 1 stick butter, melted and cooled (1/2 cup of butter)
- 1 tablespoon lemon juice (fresh squeezed)
- 1 tablespoon lemon zest
- pinch of grated Nutmeg
Cinnamon Caramel Corn with Pecans & White Chocolate (AKA Cinnamon Bun Popcorn!)

Oh yeah, it’s really good
- 12 C popped popcorn (about 1/2 C kernels)*
- 1 C roughly chopped pecans
- 1 C brown sugar
- 3/4 t cinnamon
- 1/4 C Karo syrup (or honey makes a good substitution)
- 1 stick real butter (1/2 C)
- 1/2 tsp. baking soda
- 1 tsp. vanilla
- 3 squares almond bark
- You can use air popped or microwave popcorn. If using microwave, anything works, but I prefer a “natural” flavor that’s low in butter and salt.
