Chocolate Zucchini Pecan Bread

Mix first 4 ingredients and set aside
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 eggs
- 3 cups sugar
- 3 packs soft baking chocolate (or 3 squares, melted)
- 1 1/2 cups oil
- 3 cups grated zucchini
- 1 cup pecans, chopped
- 3 teaspoons powdered sugar
Sweet Italian Sausage Quiche with Hash Brown Potato Crust

- 1 1/4 cup shredded hash brown potatoes, found in the grocery refrigerator section
- 1 teaspoon sea salt, divided
- 4 tablespoons butter, divided and melted
- 1/4 cup shredded Parmesan cheese
- 1/2 pound sweet Italian sausage
- 2 tablespoons canola oil
- 1/2 cup red bell pepper, diced
- 1 large or 2 small scallions and tops, chopped into rounds
- 4 large eggs, certainly free-range if available
- 1 1/2 cups half and half
- 1 tablespoon instant potato flakes (or 1 tablespoon flour if not following a gluten-free menu)
- 1/4 teaspoon grated nutmeg (fresh is always best)
- generous 1/2 cup grated Jarlsberg or good quality Swiss cheese (do not substitute cheddar)
- paprika

1. Preheat oven to 350°F and prepare bundt pan by spraying with cooking spray
- 1 15 ounce can pumpkin puree
- 2/3 cup vegetable oil
- 1 3/4 cups sugar
- 1 teaspoon vanilla
- 3 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoon soda
- 1/4 teaspoon salt
- 1 tablespoon pumpkin pie spice
- For Filling
- 12 ounces cream cheese, softened
- 1/3 cup sugar
- 1 teaspoon vanilla
- 1 egg
Black Bean Soup with Chipotle and Toasted Cumin Seed Crème Fraîche

Heat olive oil in large skillet over medium-high heat
- 1 tablespoon olive oil
- 2 medium-size red onions, chopped
- 1 medium-size red bell pepper, chopped
- 1 medium-size green bell pepper, chopped
- 4 garlic cloves, minced
- 4 teaspoons ground cumin
- 1 16-ounce package dried black beans
- 1 tablespoon chopped chipotle chiles from a can (this gives it a solid kick, dial back if you are wary)
- 7 cups hot water (I just used very hot tap water)
- 2 tablespoons fresh lime juice
- 2 teaspoons coarse kosher salt
- 1/4 teaspoon ground black pepper
Oatmeal Pancakes

Combine oats, soda. buttermilk
- 2 c. quick oats
- 1/2 t. baking soda
- 2 1/2 c. buttermilk
- 1 c. flour
- 2 t. baking powder
- 1 t. salt
- 1 T. sugar
- 1/3 c. salad oil
- 2 eggs, beaten
Three Bean Chili

Combine all ingr. in crock-pot & cook 6-8 hours on High
- 2/3 c. pinto beans
- 2/3 c. great northern beans
- 2/3 c. small red beans or kidney
- 1 clove garlic
- 3 t. chili powder
- 1 t. oregano
- salt to taste
- 1 can of tomatoes
- Anaheim pepper, whole to season, do not eat
- 1 T. apple cider vinegar
- 1 T. Bragg’s™ Liquid Amino
- 4 c. water

- 60 whole Caramels, Unwrapped
- 1/3 cup Semi-Sweet Chocolate Chips

- 1 lge package (6 oz) raspberry flavored gelatin
- 2 cups boiling water
- 1 cup cold water
- 1 1/2 cups drained Mandarin Orange segments
- 1 Cup drained crushed pineapple
- 2 cans (1 lb each) whole cranberry sauce
- 1/2 cup chopped pecans
- sour cream or mayonnaise for topping
- (I leave off the sour cream or mayo)
