Meatball Pasta Bake

- 1 (16-oz.) package penne pasta
- 1 small sweet onion, chopped
- 1 medium-size fennel bulb, thinly sliced (optional)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon fennel seeds
- 2 (24-oz.) jars marinara sauce
- 2 (14-oz.) packages frozen beef meatballs, thawed
- 1 cup fresh orange juice
- 3/4 cup organic chicken broth
- 1 teaspoon firmly packed orange zest
- 1 medium-size red bell pepper, chopped
- 1/2 teaspoon kosher salt
- 1 cup torn fresh basil
- 1 1/2 (8-oz.) packages fresh mozzarella cheese slices
- Garnish: fresh basil leaves
Chicken Enchiladas With Salsa Verde

Prepare the chicken: Place chicken parts in a large saucepan with onion, garlic and salt, and cover with water
- 2 2 2 pounds bone-in chicken thighs or breasts, or a mixture
- 1 1 1 small white onion, cut in half
- 4 4 4 cloves of garlic
- 1 1 1 tablespoon kosher salt
- 1 1 1 pound fresh tomatillos, husked, rinsed and cut into quarters (use canned if you can't find fresh)
- 1 1 1 small white onion, peeled and chopped
- 1 1 1 clove of garlic, peeled and chopped
- 2 2 to serrano chiles or more to taste, seeds removed if you want it less spicy, stemmed and roughly chopped
- 4 to 5 4 to 5 5 tender stems of fresh cilantro, with leaves, roughly chopped
- to to taste
- 1/2 1/2 1/2 cup neutral oil, like canola
- 12 12 12 yellow corn tortillas
- 1 1 1 cup crumbled queso fresco or cotija cheese
- 1 1 1 cup Mexican crema, or use crème fraîche or sour cream
- 1 1 1 medium-size white onion, peeled and chopped (optional)
Fettuccine with Cherry Tomatoes, Parmesan and Basil

- 1 pound all-purpose flour, plus more as needed
- 1/2 teaspoon fine sea salt, plus more for the pasta water
- 5 large eggs
- 2 cloves garlic, very thinly sliced
- 3/4 pound (about 1 pint) cherry tomatoes, halved
- Salt and freshly ground black pepper
- 18 fresh basil leaves, cut into 1/3-inch thick slices
- 1 About 1 cup finely grated Parmesan, plus more for serving

- 3 (10 ounce) cans beef stock

- 1 teaspoon Tabasco sauce (optional)

Serves 4 Directions Heat 1 tablespoon of the oil in a large skillet over medium heat
- 3 tablespoons olive oil
- 4 boneless, skinless chicken breasts (6 ounces each)
- 1 teaspoon paprika
- 2 teaspoons ground cumin
- kosher salt and black pepper
- 3 ⁄4 cup couscous
- 3/4 pound cherry or grape tomatoes, quartered
- 1/4 pound snap peas, thinly sliced crosswise (about 1 cup)
- 1/2 cup torn fresh basil
- 1/2 teaspoon grated lemon zest plus 2 tablespoons fresh lemon juice
Red Curry Chicken With Rice Salad

Directions Cook the rice according to the package directions; spread on a plate and let cool
- 1 cup long-grain white rice
- 2 tablespoons canola oil
- 2 tablespoons Asian fish sauce
- 2 teaspoons light brown sugar
- 1/2 red jalapeño or serrano pepper, thinly sliced
- 6 tablespoons rice vinegar
- 2 carrots, halved and thinly sliced
- 1/2 pound snow peas, trimmed and thinly sliced
