Whipped Shortbread Recipe

In a large bowl, cream butter and confectioners' sugar until light and fluffy
- 3 cups butter, softened
- 1-1/2 cups confectioners' sugar, sifted
- 4-1/2 cups all-purpose flour
- 1-1/2 cups cornstarch
- Nonpareils and/or halved candied cherries

- Yield: 12 muffins
- 2 teaspoons orange zest (from about 2 large oranges)
- 1 cup freshly squeezed orange juice (from same oranges)
- 1/2 cup wheat bran
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup light-brown sugar, plus extra for muffin tops
- 1/4 cup apple sauce
- 1/4 cup canola oil
- 1 teaspoon vanilla
- 1 cup fresh or frozen cranberries, roughly chopped*
