Pomegranate Roasted Carrots

- 3 cups all-purpose flour, spooned and leveled
- 1 teaspoon kosher salt

- 1/2 teaspoon baking powder
- 1 1/2 cups (3 sticks) unsalted butter, at room temperature
- 1 cup packed light brown sugar
- 3/4 cup granulated sugar

- 12 ounces semisweet or milk chocolate chips (2 cups)
- 1 cup chopped dried apricots (about 20 whole)

Cut the cabbages in half and remove the core from each side

- 2 carrots, peeled and grated
- 2 tart apples, like Granny Smith, peeled and cut into matchsticks
- 1/2 cup mayonnaise, preferably homemade or Hellmann’s
- 3 tablespoons juice from a pickle jar, or of pickle relish
- 1 tablespoon Dijon mustard
- 1 tablespoon cider vinegar
- 2 teaspoons pepper sauce, like Frank’s, or to taste
