In a large, deep skillet, heat the olive oil
- 1/3 cup extra-virgin olive oil
- 4 large garlic cloves, thinly sliced
- 1 1/4 pounds plum tomatoes, cored and chopped
- 1/4 teaspoon crushed red pepper
- Salt
- 1/2 pound dried tagliatelle
Chicken Caesar Skewers

In a large bowl, whisk the mayonnaise with the mustard, olive oil, anchovies and garlic
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon minced anchovies
- 1 garlic clove, minced
- 2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
- 12 long wooden skewers, soaked in water for 1 hour
- Freshly grated Parmigiano-Reggiano cheese, for garnish

Place large flameproof casserole or other heavy-bottomed pan over medium heat
- 8 ounces sliced bacon, sliced crosswise into 1-inch pieces
- 3 medium onions, peeled and roughly chopped
- 10 chicken thighs, with skin and bone
- 8 ounces button mushrooms, halved
- 2 or 3 garlic cloves, peeled and minced
- 1/4 cup chopped Italian parsley
- 3 tablespoons chopped tarragon
- 1 bottle dry or off-dry riesling wine (750 ml)
