Southern Fried Cabbage

Place bacon and vegetable oil into large pot over medium heat
- 3 slices of bacon, cut into thirds
- 1/3 cup vegetable oil
- 1 teaspoon salt, or to taste
- 1 teaspoon or black pepper
- 1 head of cabbage chopped
- 1 white onion chopped
- 1 pinch of sugar
Oven-Fried Potato Wedges

Preheat the oven to 375 degrees F
- 3 large baking potatoes
- 1/2 cup mayonnaise
- 1/2 teaspoon hot sauce
- 1/4 teaspoon onion salt
- 1/2 teaspoon House Seasoning, recipe follows
- 1/8 teaspoon black pepper
- 2 cups cornbread dressing mix

Sift together flour, baking powder, baking soda, salt and spices
- 3 1/2 c. all-purpose flour
- 1/4 tsp. baking powder
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. each nutmeg, cloves, cinnamon
- 1 1/2 c. each granulated sugar and packed brown sugar
- 1 c. oil
- 2 c. canned pumpkin
- 4 eggs
- 1 c. each raisins and nuts (optional)
White Bean and Roasted Eggplant Hummus

- 1 (1 1/2-pound) eggplant or 3 Japanese eggplants, trimmed and cut into 2-inch pieces
- Olive oil, for drizzling, plus 1/3 cup
- Kosher salt, for seasoning, plus 1/2 teaspoon
- Freshly ground black pepper, for seasoning, plus 1/4 teaspoon
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1/3 cup loosely packed fresh flat-leaf parsley
- 3 tablespoons fresh lemon juice (from about 1 lemon)
- 1 clove garlic
- 1 hothouse cucumber, cut into 1/4-inch thick slices

Combine lemon juice, red pepper, black pepper and salt in a bowl and whisk unitl salt cystals have dissolved
- 1/4 coup fresh lemon
- 1/2 tspl. crushed red pepper
- 1/2 tsp. cracked black pepper
- 1/2 tsp. coarse salt
- 4 strips lemon zest
- 3 cloves garlic minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil, cilantro, dill or oregano, or a mix of all four
- 1/2 cup extra virgin olive oil
Old-Fashioned Lemon Bread

Directions PREHEAT oven to 350° F
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 2/3 cup (5 fl.-oz. can) NESTLÉ® CARNATION® Evaporated Milk
- 1/3 cup olive or vegetable oil
- 1 1/2 teaspoons grated lemon peel (about 1 lemon - reserve lemon for later use)

- 1 pouch (1 lb 1.5 oz) Betty Crocker® double chocolate chunk cookie mix 1/3 cup vegetable oil 2 tablespoons water 1 egg
- Frosting
- 3 cups powdered sugar 1 package (3 oz) cream cheese, softened 1/4 cup butter, softened 2 tablespoons milk 1/4 teaspoon mint extract 3 to 4 drops green food color
- Glaze
- 1 oz unsweetened baking chocolate 1 tablespoon butter
