MOOSEWOOD VEGAN CHOCOLATE CAKE

- 1 1/2 Cups flour
- 1/3 Cup Cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1 Cup sugar1/2 cup vegetable oil
- 1 C cold water or coffee
- 2 tsp vanilla
- 2 TBS vinegar
Pumpkin pudding

Put all the ingredients into a high speed blender and blend until smooth
- 2 apples
- 2 bananas
- 2 cups pumpkin cubes
- 4 pc pitted dates
- 1 spoon of sprouted buckwheat
- 1 pinch of cinnamon
- + 1 more apple, 1 more banana
- Put all the ingredients into a high speed blender and blend until smooth.
- Put into nice cups and garnish with chopped apple and banana, cacao nibs.
Cream Cheese Frosting

Cream cheese should be cold and butter at room temperature
- 8 oz cream cheese
- 5 TBS unsalted butter
- 2 tsp vanilla
- 2 to 2 1/2 cups powdered sugar
CASHEW CHEESECAKE

DIRECTIONS To make the crust, process the macadamia nuts and dates in the food processor
- For the Crust:
- 2 cups raw macadamia nuts
- 1/2 cup dates, pitted
- 1/4 cup dried coconut
- For the cheese:
- 3 cups chopped cashews, soaked for at least 1 hour
- 3/4 cup lemon juice (or lime juice)
- 3/4 cup honey
- 3/4 cup coconut oil
- 1 teaspoon vanilla
- 1/2 teaspoon celtic sea salt (optional)
- For raspberry sauce:
- 1 bag frozen raspberries
- 1/2 cup dates

- 2 tablespoons white sugar
- 2 teaspoons baking powder

- 3/4 cup fresh or soaked dried dates 1/2 cup pomegranate seeds (the amount from 1/2 pomegranate) 1/2 cup ground flaxseed 1/4 cup hemp seeds 1/4 cup sunflower seeds 1/2 tsp lemon zest Sea salt to taste 1/4 cup Popped Amaranth (p. 209)
