Roasted Brussels Sprouts with Bacon and Blue Cheese

Preheat oven to 400 degrees
- 2 pounds Brussels sprouts, trimmed and cut in half
- 3 1/2 tablespoons extra virgin olive oil (with 1/2 tablespoon reserved)
- Salt and freshly ground pepper, to taste (I like to be generous with the pepper)
- 1 1/2 tablespoons good quality balsamic vinegar (with 1/2 tablespoon reserved)
- 1/4 cup cooked and crumbled bacon (more if you're a bacon lover)
- 2-3 ounces mild blue cheese, crumbled
Blue Cheese Dip

Place all ingredients into a food processor and mix well
- 8 oz crumbled blue cheese
- 8 oz sour cream
- 1 bunch (6-8) green onions, finely chopped
- 1 tsp Worchestershire sauce
- salt and pepper to taste
Steak Marinade

Mix together and marinade 4-8 hours
- 1 Tbsp olive oil
- 1-2 Tbsp red wine vinegar
- 2 Tbsp Montreal steak seasoning
- 2 Tbsp minced garlic
- 1 lemon (juice only)
- 3 Tbsp soy sauce
- 2 Tbsp Worcestershire sauce
- 5 shakes Tobasco sauce
- Dash of red pepper
- Dash of black pepper
- Dash of salt
Chicken with Prosciutto, Fontina, and Mushroom Sauce

Preheat oven to 425 degrees
- 3 chicken breasts (skinless, boneless)
- 1 tsp dried sage
- 3-4 slices prosciutto
- 1 cup grated fontina cheese
- 2 Tbsp olive oil
- 8 oz mushrooms, sliced (Cremini or white button)
- 1 small onion, chopped
- 4 tsp flour
- 1 cup dry white wine
- 2 cups chicken stock
- 6 Tbsp heavy whipping cream
- Salt and Pepper to taste
Sausage Stars (aka Yummy Snausage Deliciousness)

Preheat oven to 350 degrees
- 1 lb pork sausage
- 1 1/4 cup grated cheddar cheese
- 1 1/4 cup grated Monterey Jack cheese
- 1 cup ranch dressing
- 1 small can sliced black olives
- 1 tsp ground red pepper
- 1 pkg won ton wrappers
Mexican Manicotti's

Mix together ground beef, beans, onions, oregano, 2 1/2 Tbsp of taco seasoning, and 1 1/2 cup cheese
- 1 lb ground beef
- 3/4 can refried beans
- 3 Tbsp chopped onion
- 2 tsp oregano
- 2 pkg taco seasoning mix
- 4 cups shredded cojack cheese
- 1 pkg manicotti shells
- 1 (15oz) can tomato sauce
- 2 cups water
- 1/2 cup sour cream
Bacon Crescent Rolls

Preheat oven to 375 degrees
- 1 pkg cream cheese, softened
- 1 lb bacon, cubed, cooked, and drained
- 1/3 cup Parmesan cheese, grated
- 1/4 cup onions, finely chopped
- 2 Tbsp chopped fresh parsley
- 1 Tbsp milk
- 2 cans (8oz each) refrigerated crescent dinner rolls
Beef-and-Mashed-Potato-Stuffed Peppers with Garlicky Bread Crumbs

1. Preheat the oven to 400°
- 3 Tbsp extra-virgin olive oil, plus more for drizzling
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 pound lean ground beef
- Salt and pepper
- 2 pounds potatoes, boiled and mashed (seasoned with salt and pepper)
- 1 1/2 cup freshly grated Parmesan cheese
- 2 Tbsp chopped flat-leaf parsley
- 1/2 cup bread crumbs
- 4 large red and green bell peppers, caps removed and reserved, seeds and white membranes discarded
Garlic Mashed Potatoes

Cube potatoes and boil until tender add one tsp garlic to water
- 8 medium red potatoes
- 2 tsp crushed garlic
- 1/2 cup salted butter, softened
- 1/4 cup half and half cream
- 1 tablespoon white sugar
- 1/4 tsp steak seasoning
- 1/4 tsp garlic powder
Cheesy Bacon Dip

- 1 (8oz) pkg cream cheese, softened
- 1/2 cup mayonnaise
- 2 garlic cloves, minced
- 1 cup shredded cheddar cheese
- 3/4 pkg bacon, cooked and drained OR 1 container prepared bacon pieces
- 1 tomato, diced
- 1/2 cup green onions, diced
