Soy Glazed Chicken thighs

Whisk garlic, lime juice, soy sauce, and honey in a large bowl
- 4 garlic cloves, finely chopped
- 1/4 cup fresh lime juice, plus wedges for serving
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons honey
- 8 chicken thighs (about 4 lb.)
Mango and Black Bean Salad

1. Combine all ingredients in a large bowl
- 1 1/2 cups chopped peeled ripe mango
- avocados
- 3 tablespoons finely chopped fresh cilantro
- 2 tablespoons roasted tomatillo or fresh salsa
- 2 tablespoons fresh lime juice
- 2 tablespoons extravirgin olive oil
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 (15-ounce) can organic no-salt-added black beans, rinsed and drained
Citrus Vinaigrette

blend all ingredients and adjust seasonings if necessary
- 1/2 c OJ
- 1/2 c extra virgin olive oil
- 1/4 c miracle whip light
- 2-3 T agave nectar
- 2 T finely minced shallot
- 1 T lemon juice
- 1 t orange marmalade
- 1 t dijon mustard
- salt and pepper
Sue's salad

mix dressing together and serve over spinach
- dressing:
- spinach
- pint of strawberries
- 1 T toasted sesame seeds
- 1 t dill weed
- 1/4 t dry mustard
- 1/4 t salt
- 1/4 t pepper
- 1/4 t garlic powder
- 1/4 cup sugar
- 1/2 cup red wine vinegar
- 1/2 cup salad oil
Judy's Smoked Salmon Supreme

1. cook egg noodles, rinse, drain and put into casserole dish (or dishes)
- 3 cups linguine or egg noodles
- 1 T butter
- 4 oz sliced mushrooms
- 2 T chopped onion
- 3/4 cup cream of celery soup
- 1/2 cup low fat sour cream
- 1/2 cup low fat milk
- parsley
- 1/8 t basil
- 1 1/2 cups smoked salmon- cut into pieces
- 2 T pimento
- 1/2 cup slivered almonds
- fresh bread crumbs
- parm cheese
Healthy Vegetable Chicken Casserole

Prepare the white sauce by placing the butter in a small sauce pot that has been preheated over medium heat
- 12 oz cooked chicken breasts, diced
- 2 T all purpose flour
- 2 T butter, unsalted
- 10 oz skim milk
- 1 pinch white pepper
- 1 t Italian seasoning
- 1 T parmesan cheese, grated
- 7 oz penne pasta, whole wheat
- 2 yellow or orange bell peppers, chopped
- 1 zucchini, chopped
- 2 heads, approx. 12 ounces broccoli, chopped
- 1/3 c monterey jack cheese
- nonstick cooking spray
Broccoli Cheddar Soup

Melt the butter in a large, heavy pot over medium heat
- 4 tablespoons unsalted butter
- 1 small onion, chopped small
- 1 garlic clove, minced
- 1/4 cup all-purpose flour
- 1 cup half-and-half
- 4 cups low-sodium vegetable or chicken broth (here’s my favorite chicken stock)
- 1 bay leaf
- Kosher salt and freshly ground pepper
- 1 1/4 pounds broccoli or 4 cups broccoli florets and stems, chopped small
- 1 large carrot (about 6 ounces) or 2 slim ones, chopped tiny (1 cup)
- 8 ounces (about 2 1/2 cups) coarsely grated sharp cheddar cheese, plus a pinch extra for garnish
Baked Sesame garlic Chicken

1.Preheat oven to 375 degrees then lightly coat a 9" x 13" casserole dish with cooking spray
- 3 boneless skinless chicken breasts
- salt
- pepper
- 1/3 cup all-purpose flour
- 1/3 cup honey
- 2 tbsps soy sauce
- 3 cloves garlic (minced)
- 1 tbsp fresh lemon juice
- 1 tsp sesame oil
- 2 tsps sesame seeds
- 2 tbsps green onions (sliced)
- 1/2 tsp red pepper flakes (optional)

- 1/2 teaspoon dry mustard powder
- 1 can cream of chicken soup
- 1/2 cup sour cream, regular or light
- 1/2 cup mayonnaise
- 1/2 teaspoon pepper
- 3 cups cheddar cheese
- 1 cup gruyere cheese (or you can use 4 cups cheddar cheese)
