Caprese-Style Stuffed Chicken Rolls with Greens

Preheat a grill to medium
- 4 chicken cutlets (about 1 1/2 pounds)
- Salt and pepper
- 1/3 cup basil leaves
- 1 cup shredded mozzarella cheese (about 4 ounces)
- 2 tomatoes, cored and thinly sliced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 red bell pepper--stemmed, cored and thinly sliced
- 1 cucumber--trimmed, halved lengthwise and thinly sliced crosswise
- 1/2 head red-leaf lettuce, torn into bite-size pieces
Pizza Macaroni and cheese

Preheat oven to 350º. Cook macaroni according to package directions for al dente
- 2 pkg (14 oz each) deluxe macaroni and cheese dinner mix
- 1/2 c sour cream
- 1 can (14.5 oz) petite diced tomatoes, drained
- 1 can (15 oz) pizza sauce (I thought the casserole was a little dry, maybe add more)
- 1 small green pepper, chopped
- 1 small sweet red pepper, chopped
- 2 c (8 oz) shredded Italian cheese blend
- 2 oz sliced pepperoni
Easy Brunswick Stew

In a late dutch oven, cook onion in EVOO over medium heat until tender, 5 minutes Add pork and cook 1 minute
- 1 onion, finely chopped
- 2 Tbsp EVOO
- 2 c Pulled Pork
- 10 oz frozen corn, thawed
- 10 oz frozen baby lima beans, thawed
- 10 oz frozen sliced okra, thawed
- 10 oz frozen peas and carrots combo, thawed
- 2 c Tomato Sauce
- 1 c beef broth
- salt and pepper
- 2 slices crusty bread
Vegetable Beef Soup

Brown beef in nonstick skillet over medium heat
- 1 lb extra lean ground beef
- 4 c water
- 1 lb potatoes, pared and chopped
- 1/2 med onion, chopped
- 2 cans (4 oz each) mushroom pieces, drained (optional)
- 1 envelope dry low-sodium onion soup mix
- 1 can (16 oz) diced tomatoes
- 2 medium carrots, chopped
- (maybe some cabbage, too)
Pierogi with Ham and Asparagus

In a large skillet, melt butter over medium heat
- 2 Tbsp butter
- 1 (12 0z) pkg. diced cooked ham, drained
- 1/2 pound asparagus, trimmed and cut into 1-inch pieces
- 1 tsp bottled minced garlic
- 2 Tbsp all-purpose flour
- 1 (15 oz) can chicken broth
- 1 (8 oz) container chive and onion cream cheese, softened
- 2 (16 oz each) pkgs frozen potato and Cheddar pierogi, baked according to package directions
- 1 c chopped grape tomatoes
Chicken Tetrazzini

Prepare linguini according to package directions, and keep warm
- 1 pkg linguini
- 1-1/2 lbs boneless, skinless chicken breasts, cut into 1 inch cubes
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 c butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 (10-3/4 oz) cans cream of mushroom soup
- 1 (5 oz) pkg shredded Parmesan cheese
- 1 c sour cream
- 1 c frozen green peas, thawed
- 3/4 c coarsely crushed round butter crackers
Broiled Sockeye Salmon with Citrus Glaze

Position a rack in the oven 3 inches from the broiler
- 1 side, skin-on, sockeye salmon, 1 1/2 to 2 pounds, pin bones removed
- 1/3 cup dark brown sugar
- 2 tablespoons lemon zest
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper

- 2 Tbsp honey
- 4 tsp butter, melted
- 1 tsp ground coriander

- 1 pkg Hillshire Farms smoked sausage, diagonally sliced thin
- 2 cloves garlic, crushed
- 1/4 c olive oil
- 1 large red pepper, sliced thin
- 1 small yellow onion, sliced thin
- 1 pkg (10 oz) frozen broccoli, thawed
- 1/2 c chicken broth, or water
- 1/2 c tomato sauce
- 2 c instant rice
