- 1 gallon glass jar
- dill
- 3 heads garlic, peeled and coarsely chopped
- enough cucumbers, cut in spears to fit jar
- 3 Tbsp salt
- 1 tsp alum crystals
- 1 pint cider vinegar
- water
- 1 slice rye bread
Mandarin Orange and Pear Salad with Toasted Pecan Vinaigrette

Salad: In a large bowl, combine lettuces, oranges, pears, and red onion
- Salad:
- 10 c mixed baby lettuces
- 6 mandarin oranges, peeled and segmented
- 2 pears, cored and cut into 1/4 inch slices
- 1/2 small red onion, thinly sliced
- Toasted Pecan Vinaigrette:
- 2 Tbsp Dijon mustard
- 1 Tbsp honey
- 1/4 c extra-virgin olive oil
- 1/4 c balsamic vinegar
- 1 c toasted and chopped pecans
Pork and Ginger Noodle Soup

Soak noodles in warm water
- 8 oz rice noodles
- 1 qt. beef broth
- 1 inch fresh ginger, sliced
- 2 c Pulled Pork
- 6 baby bok choy, sliced crosswise
- 1-1/2 c mung bean sprouts
- 1/4 c sliced scallions
- 1/2 c cilantro sprigs
- 8 lime wedges
- hot chili oil
Cauliflower & Broccoli Salad

Mix broccoli, cauliflower, onion, bacon, pecans, and raisins together
- 2 heads broccoli, cut into small pieces
- 2 heads cauliflower, cut into small pieces
- 1 small onion, chopped
- 1 lb bacon, cooked and crumbled
- 1 cup chopped pecans - optional
- 1 cup golden raisins
- 1 jar Miracle Whip
- 1-2 tsp cider vinegar - to taste
Slow-Cooker Barbecue Beef Sandwiches

Sprinkle beef evenly with 1 teaspoon salt
- 1 (3 1/2-pound) eye-of-round roast, cut in half vertically
- 2 teaspoons salt, divided
- 2 garlic cloves, pressed
- 1 (10-ounce) can condensed beef broth
- 1 cup ketchup
- 1/2 cup firmly packed brown sugar
- 1/2 cup lemon juice
- 3 tablespoons steak sauce
- 1 teaspoon coarse ground pepper
- 1 teaspoon Worcestershire sauce
- 12 Kaiser rolls or sandwich buns
- Dill pickle slices
Heavenly Hash

Thoroughly mix all ingredients and chill at least one hour
- 8-3/4 oz can pineapple tidbits, well drained
- 2 c thawed Cool Whip
- 1 c flaked coconut
- 1 c mini-marshmallows
- 1/4 c chopped maraschino cherries
- 3 Tbsp milk
Thai Noodle Salad

1. Cook pasta according to package directions
- 1 (8-oz.) package vermicelli
- 1/3 cup chopped fresh cilantro
- 2 garlic cloves, minced
- 1 jalapeño pepper, seeded and chopped
- 1/4 cup fresh lime juice
- 1 tablespoon fish sauce*
- 1 tablespoon honey
- 1 1/2 teaspoons sesame oil
- 1/4 teaspoon salt
- 2 carrots, grated
- 1 cucumber, peeled, seeded, and thinly sliced
- 1 cup finely shredded cabbage
- 1/4 cup chopped fresh mint
- 1/4 cup chopped dry-roasted peanuts
Weeknight Ravioli Lasagna

Preheat the oven to 375º
- 1-1/4 c marinara sauce (I bought a regular size jar of sauce for a doubled recipe and it needed more)
- 1 (20 oz) pkg refrigerated cheese ravioli
- 1 box (10 oz) box frozen spinach, thawed and squeezed dry
- 8 oz shredded part-skim mozzarella
- 1/4 c grated Parmesan cheese
Sautéed Pork Chops with Garlic Spinach

In a large skillet, heat oil over medium hight heat
- Garlic Spinach:
- 1 Tbsp olive oil
- 4 bone-in pork chops (8 oz each)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 medium lemon
- 1 Tbsp olive oil
- 3 garlic cloves, thinly sliced
- 2 pkgs (5 oz each) fresh spinach, stems removed
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 tsp lemon juice
- This was just enough spinach, maybe double it next time.
Taffy Apple Salad

Day Before: Mix together drained pineapple (reserve liquid) and marshmallows
- 1 lg can pineapple chunks
- 2 c mini marshmallows
- 1-1/2 c salted peanuts
- 2 c diced, unpeeled apples
- 1 lg container of Cool Whip
- 1/2 c sugar
- 1 Tbsp flour
- 1 well beaten egg
- 1-1/2 Tbsp white vinegar
