Rosemary and Ravioli Chicken Soup

In a 4- to 6-qt Dutch oven bring vegetable broth and water to boiling over medium-high heat
- 1 - 32 oz carton chicken broth
- 1 c water
- 1-1/2 c coarsely chopped red-skin potatoes
- 1 Tbsp snipped fresh rosemary
- 1 - 9 - to 12-oz pkg refrigerated spinach or mushroom ravioli
- 1/2 rotisserie chicken, meat removed and cut up
- 8 oz green beans, trimmed and cut into 1-inch pieces (2 cups)
- 1 Tbsp butter
Ham and Bean Soup

Sort and wash beans, Place beans in a 6-quart Dutch oven; add water 2 inches above beans, and soak 8 hours
- 16 oz package dried great Northern beans
- 3 c chopped cooked ham
- 1 large sweet onion, diced
- 2 garlic cloves, minced
- 2 Tbsp olive oil
- 1 ham bone
- 2 (32 oz) containers chicken broth
- 1/2 tsp dried crushed red pepper

- 1 - 6 oz can frozen orange juice concentrate, thawed
- 1- 6 oz can frozen lemonade, thawed
- 1 - 750 ml bottle tequila or rum, chilled

Preheat oven to 400º. In a large bowl, combine muffin mix, corn and eggs; stir just until moistened
- 2 pkgs (8.5 oz each) corn bread/muffin mix
- 1 can (14-3/4 oz) cream-style corn
- 2 large eggs, lightly beaten
- 1-1/2 c (6 oz) shredded Mexican cheese blend, divided
- 1-1/2 c chopped cooked chicken breast
- 3/4 c red enchilada sauce
Crispy Oven-Fried Turkey Patties with Bourbon BBQ Sauce

Preheat the oven to 375 degrees
- BBQ Sauce
- 1 cup ketchup, preferable organic
- 1/4 cup chicken stock
- 2 shots (about 1/4 cup) bourbon
- 3 tablespoons worcestershire sauce
- 3 tablespoons brown sugar
- 3 tablespoons cider vinegar
- 2 cloves garlic, minced
- coarse black pepper
- Patties
- 1 1/4 pounds ground turkey
- 2 - 3 scallions, finely chopped
- 3 tablespoons finely chopped parsley
- 2 tablespoons chopped fresh thyme
- salt and pepper
- flour for dredging
- 2 eggs, beaten with a few dashes of hot sauce, salt and pepper
- 1 1/2 about 1 1/2 cups cornflakes, crushed
- cooking spray
- 4 brioche or other soft sandwich rolls split
- toppings: shredded cabbage or lettuce, diced or sliced seeded tomatoes, chopped raw onion, chopped pickles
Blackberry Pork Tenderloin

Preheat oven to 450º. Lightly spray a rimmed baking sheet with cooking spray
- 2 (1-1/2 lb) pork tenderloins
- 2 tsp fresh thyme leaves
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 10 slices center-cut bacon
- 1 Tbsp olive oil
- 2 cloves garlic, chopped
- 1/2 c balsamin vinegar
- 1/3 c blackberry preserves
- 1-1/2 c fresh blackberries, divided
- Garnish: fresh thyme, fresh blackberries

- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 2 Tbsp. sugar
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
Red Wine-Tomato Pasta

Sauté garlic in hot oil in a large skillet over medium heat 1 minute or until lightly browned
- 1 1/2 teaspoons minced fresh garlic
- 2 tablespoons olive oil
- 1/2 cup dry red wine
- 2 (14 1/2-ounce) cans petite diced tomatoes, undrained
- 2 tablespoons chopped fresh or 1 teaspoon dried basil
- 1 tablespoon chopped fresh or 1/2 teaspoon dried oregano
- 1 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 12 ounces uncooked thin spaghetti
- 1 (4-ounce) block mozzarella cheese, shredded
- 1/3 cup freshly grated Parmesan cheese
- Toppings: chopped fresh basil, freshly grated Parmesan cheese
