Portillo's Chopped Salad

Make the Salad Dressing by add the first 6 ingredients to a blender
- Sweet Italian Salad Dressing:
- 1/4 c balsamic vinegar
- 2-3 cloves fresh garlic, minced
- 1/2 tsp dried oregano
- 1 tsp sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 c olive oil
- Salad:
- 4 c ditalini pasta, cooked al dente in salted water, completely cooled
- 3 c iceberg lettuce, chopped
- 3 c Romaine lettuce, chopped
- 2 c red cabbage, chopped
- 4 Roma tomatoes, diced
- 1 c green onions, finely chopped
- 2 c chicken, cooked and cubed
- 1 c bacon, cooked and crumbled
- 4 oz gorgonzola cheese, crumbled (I used Feta instead)

- 2 Tbsp plus a drizzle of olive or vegetable oil
- 1/2 lb andouille sausage or cured chorizo (casings removed if needed), sliced or chopped
- 1 small green bell pepper or poblano chili, seeded and finely chopped
- 1 small white or red onion, finely chopped
- 1 stalk celery with leafy top, finely chopped
- 2 cloves garlic, finely chopped
- 1 lb peeled and deveined medium shrimp
- 2 Tbsp fresh thyme leaves, chopped
- 1 c lager beer
- 1/4 c finely chopped fresh flat-leaf parsley
- 2 scallions, thinly sliced on an angle
