- 8 eggs
- 1 (8 oz) package cream cheese, cubed
- 8 oz pork sausage, cooked and drained
- 1-1/2 c sharp cheddar cheese, grated
- 1-1/2 c milk
- 1 c heavy cream
- 1 c heavy cream
- 3 Tbsp fresh chives
- Kosher salt and freshly ground pepper, to taste
Rigatoni with Bacon, Onion & Balsamic Vinegar

Bring a large pot of water to a boil for the pasta
- 3 3 3 Tbsp olive oil
- 8 8 1/4-inch oz meaty guanciale or pancetta, cut into 1/4-inch cubes
- 2 2 2 medium onions, finely chopped
- 4 4 4 cloves garlic, chopped
- 1 1 1 tsp sugar or acacia honey
- Salt and pepper
- 2 2 2 large fresh bay leaves
- 1 1 1 c chicken stock
- 1 1 1 Tbsp aged balsamic vinegar (the thicker, the better)
- 1 1 1 can (28 oz) San Marzano tomatoes
- 1 1 1 lb mezze rigatoni, rigatoni, or penne rigate
- Grated Parmigiano-Reggiano, for tossing and serving
Tuna Cakes

Stir together tuna, 1/3 c breadcrumbs, and next 6 ingredients in a large bowl just until blended
- 2 (7 oz) foil pouches solid white tuna in water, flaked
- 1-1/3 cups fine, dry breadcrumbs
- 2 large eggs, lightly beaten
- 2 dill pickle spears, finely chopped
- 1 celery rib, finely chopped
- 1/4 c finely chopped red onion
- 1/4 tsp salt
- 1/2 tsp freshly ground pepper
- 2 Tbsp olive oil
- Bibb lettuce leaves
- Tomato slices
- Dill pickle spears
Feta and Strawberry Salad
