Irish Soda Bread

Mix and sift flour, sugar, salt and baking powder
- 4 cups sifted all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/4 cup butter or margarine
- 2 cups seedless raisins
- 1/2 teaspoon cream of tartar
- 2 tablespoons of caraway seed
- 2 cups of buttermilk
- 1 egg
- 1 teaspoon baking soda
Pressure Cooker Irish Stew

Rich stew made in the pc in less than an hour with that cooked all day taste
- 1 1/2 lbs stew meat (I use half beef and half pork)
- 1/4 cup extra virgin olive oil
- 1 (10 1/4 ounce) can tomato soup
- 1 (14 ounce) can chicken broth (or water)
- 4 carrots, coarsely chopped
- 4 large potatoes, peeled and cut into chunks
- 4 stalks celery, coarsely chopped
- 4 onions (half coarsely chopped, half diced)
- 2 teaspoons kosher salt
- 1 teaspoon fresh ground pepper
- 1/3 cup fresh parsley (chopped fine)
- 1 (12 ounce) can beer or 1 (12 ounce) can ale
- 2 bay leaves
Fresh Corn Cornbread

1. Adjust oven rack to middle position and heat oven to 400 degrees
- 1 1/3 cups (6 2/3 ounces) stone-ground cornmeal
- 1 cup (5 ounces) all-purpose flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 1/4 teaspoons salt
- 3 ears corn, kernels cut from cobs (2 1/4 cups)
- 6 tablespoons unsalted butter, cut into 6 pieces
- 1 cup buttermilk
- 2 large eggs plus 1 large yolk
MASHED POTATOES WITH GREEN ONIONS

Cut all potatoes into 1 1/2-inch pieces
- 1 1/2 pounds red-skinned potatoes, scrubbed, unpeeled
- 1 1/2 pounds russet potatoes, scrubbed, unpeeled
- 1 cup half and half
- 1/2 cup finely chopped green onions
- 1/4 cup (1/2 stick) butter, room temperature
Preserved Lemons

We prefer Meyer lemons; however, if you can't find them, you can substitute regular (Eureka) lemons
- 4 Meyer lemons , scrubbed and dried well
- 3/4 cup kosher salt
- 1 1/2 cups fresh lemon juice from 8 lemons
White Chili

1 Combine beans, chicken broth, garlic and half the onions in a large soup pot and bring to a boil
- 1 lb large white beans, soaked overnight in water, drained
- 6 cups chicken broth
- 2 cloves garlic, minced
- 2 medium onions, chopped (divided)
- 1 Tbsp olive oil
- 2 4-ounce cans chopped green chilies
- 2 tsp ground cumin
- 1 1/2 tsp dried oregano
- 1/4 tsp ground cloves
- 1/4 tsp cayenne pepper
- 4 cups diced cooked chicken
- 3 cups grated Monterey Jack cheese
- 1 jalapeno or serrano pepper, chopped (optional)
Bread Pudding

- Bourbon Sauce:
- 1/2 cup (1 stick) butter, melted
- 1 cup sugar
- 1 egg
- 1 cup Kentucky bourbon whiskey
- Bread Pudding:
- 1 loaf French bread, at least a day old, cut into 1-inch squares (about 6-7 cups)
- 1 qt milk
- 3 eggs, lightly beaten
- 2 cups sugar
- 2 Tbsp vanilla
- 1 cup raisins (soaked overnight in 1/4 cup bourbon)
- 1/4 teaspoon allspice
- 1/4 to 1/2 teaspoon cinnamon
- 3 Tbsp unsalted butter, melted
Grandma's Cucumber Salad

Combine all in a large bowl, toss making sure everything is coated well
- 3 Med. Cucumbers Peeled and Sliced 1/4"
- 1 Med. Onion sliced and separate into rings
- 3 Med. tomatoes cut into wedges
- 1/2 C. Vinegar
- 1/4 C. Sugar
- 1 C. water
- 1/4 C. olive oil
- 2 tsp.salt
- 1 tsp. ground pepper
JD's BBQ SAUCE

Simmer over low heat for a few hours stirring occasionally
- 2 #10 cans Hunts ketchup
- 1 can water
- 5 rounded tablespoons salt
- 2 rounded and 1 level tablespoons garlic and onion powder.
- 2 rounded and 1 level tablespoons thyme and oregano
- 1 heaping tablespoon cumin
- 4 level tablespoons black pepper
- 2 level tablespoons red pepper
- 2 cups Worchestershire (topped off cups)
- 2 cups vinegar
- 1 cup liquid smoke
- 10 to 12 bay leaves
Peruvian Roast Chicken with Garlic and Lime

This recipe calls for a vertical poultry roaster
- 3 tablespoons extra-virgin olive oil
- 1/4 cup lightly packed fresh mint leaves
- 2 tablespoons kosher salt
- 6 medium garlic cloves, peeled and roughly chopped
- 1 tablespoon ground black pepper
- 1 tablespoon ground cumin
- 1 tablespoon sugar
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- 2 teaspoons finely grated zest and 1/4 cup juice from 2 limes
