"This is just a plain recipe that I made up when I was bored and everyone loves it
- 3 1/2 pounds apples - peeled, cored and sliced
- 1/2 cup butter
- 1 cup brown sugar
- 1 cup all-purpose flour
- 3 packets instant maple and brown sugar oatmeal
- 1 pinch salt
- 1/2 cup chopped walnuts
- 1/4 cup maple syrup

n a large skillet, heat olive oil over medium heat
- 1 1/2 to 2 pounds lean ground beef or turkey
- 1 tablespoon oil

- 1 can (8 ounces) tomato sauce

Heat the oil in a large heavy pot or Dutch oven over medium heat
- 1 tablespoon canola oil
- 3 jalapeno peppers, diced
- 6 cloves garlic, minced
- 1 small lump ginger, grated
- 1 1/2 cups cremini mushrooms, washed and sliced
- 1 lime, zest and juice
- 8 cups chicken, or vegetable stock
- 1/2 cup jasmine rice

- 1/2 cup freshly squeezed orange juice (2 oranges)
- 1 tablespoon chili powder
- 1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
- 1 tablespoon minced fresh garlic (3 cloves)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 3 whole (6 split) boneless chicken breasts, skin on
Red Lentil Tarka Dahl (Indian Lentil Curry)

1. Place lentils into a mesh metal strainer and rinse under cold water until water runs clear
- Tarka Tempering:
- 1 cup red lentils (split)
- 1 large onion, diced
- 2 large tomatoes, diced (or 1 15 oz. can diced tomatoes)
- 2-3 cloves of garlic, minced
- 1/4 tsp turmeric
- 1/2 – 3/4 tsp Herbamare or salt to taste
- 3 cups of water or vegetable broth (low sodium)
- 1-2 tbsp lemon juice
- 3/4 tsp roasted ground cumin
- 1/2 tsp roasted ground coriander
- 1 handful cilantro/coriander, chopped for garnish
- 2-3 inches of ginger peeled and sliced in long strips
- 1 tsp cumin seeds
- 1 tsp mustard seeds (black)
- 1 dried red chilli, chopped (more if desired)
- 4-6 curry leaves *optional

- 1 tablespoon oil
- 1/2 yellow onion, diced
- 1 small potato, peeled and diced
- 1/2 zucchini, sliced in half moons
- 1 green onion, chopped
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- 1/2 cup frozen peas
- 2 heaping tablespoons Jajang paste (black paste)
- 1/2 cup water
- 2 tablespoons rice wine
- 1 tablespoon sugar (or more)
- Cucumber, peeled and cut in matchsticks
Sausage Vegetable Orzo

Heat olive oil in 10-12 inch skillet
- 2 T olive oil
- 2 red potatoes, peeled, quartered and cut in thin slices
- 2 shallots, cut in slices
- 1 cup mushrooms, sliced (optional)
- 1/2 pound Jimmy Dean's sausage
- 1-1/2 cups frozen peas, thawed
- 1/2 can diced tomatoes (Hunts)
- 2/3 cup Orzo (cooked per package instructions)
Chicken Marsala

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly
- 1/2 cup all-purpose flour
- 1 tablespoon Essence, recipe follows
- 2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
- 1 tablespoon olive oil
- 4 tablespoons butter
- 3 cups sliced mushrooms (cremini, oyster, shiitake)
- 3/4 cup Marsala
- 1 cup chicken stock
- Salt and freshly ground black pepper
- Chopped chives, for garnish

- 1 lb potatoes, peeled and cut into 1" chunks
- 1 cup sun-dried tomatoes (not the kind packed in oil)
- 6 cups water or vegetable broth
- 1 28 ounce can of tomatoes, chopped
- juice of 1/2 lemon, or to taste.
