Zucchini Fritters with Orange Shrimp

1. Thaw shrimp, if frozen
- 8 large fresh or frozen shrimp with tails (about 7 ounces)
- 1 teaspoon finely shredded orange peel
- 3 tablespoons orange juice
- 1 tablespoon packed brown sugar
- 1 tablespoon snipped fresh parsley
- 1/4 teaspoon ground ginger
- 1 1/2 cups shredded zucchini and/or yellow summer squash
- 1/8 teaspoon salt
- 1/2 cup finely chopped red sweet pepper (1 small)
- 1/4 cup finely chopped white onion
- 1 egg, lightly beaten
- 3 tablespoons crushed multigrain saltine crackers
- 1/8 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons crumbled reduced-fat feta cheese (optional)
- Dipping Sauce
- 1/4 cup plain fat-free Greek yogurt
- 1 teaspoon grated orange peel
- 2 - 3 teaspoons orange juice
- 1/8 teaspoon ground ginger

Dad's Stuffed Bell Peppers

1 Bring a large pot of water to a boil over high heat
- 4 bell peppers, any color
- Salt
- 5 Tbsp extra-virgin olive oil
- 1 medium yellow onion, peeled and chopped
- 1 clove of garlic, peeled and chopped
- 1 lb of lean ground beef
- 1 1/2 cup of cooked rice
- 1 cup chopped tomatoes, fresh or canned (if using can, drain of excess liquid first)
- 1 tbsp chopped fresh oregano or 1 teaspoon of dried oregano
- Fresh ground pepper
- 1/2 cup ketchup
- 1/2 tsp of Worcestershire Sauce
- Dash of Tabasco sauce
Shaved Cucumber Salad

1. With a vegetable peeler, shave cucumbers into wide ribbons, stopping when you reach seeds; reserve 1 center
- Salad:
- 3 English cumcumbers
- 2 stalks celery, thinly sliced
- 1/2 medium white onion
- Dressing:
- 1 reserved cucumber center
- 1/4 cup mayonnaise
- 1/4 cup fresh cilantro
- 2 1/2 teaspoons champagne vinegar
- salt and pepper to taste

- 2 pounds wild shrimp (36-40 count), peeled, deveined and cut in half

- 2 serrano chiles (or less depending on how hot you like it), sliced
