Orecchiette with Sausage and Roasted Peppers

- 2 medium red bell peppers, four flat sides sliced off core, ribs and seeds discarded.
- 2 medium yellow bell peppers, four flat sides slided off core, ribs and seeds discarded.
- Coarse salt and freshly ground pepper.
- 1 pound orecchiette or other short pasta
- 2 teaspoons olive oil
- 1 pound sweet Italian sausage, removed from casing
- 1 tablespoon butter, cut into small pieces
- 1/3 cup grated Parmesan cheese
My Favorite Meatloaf

Preheat oven to 350 degrees
- Meatloaf:
- ■1 cup Whole Milk
- ■6 slices White Bread
- ■2 pounds Ground Beef
- ■1 cup (heaping) Freshly Grated Parmesan Cheese
- ■1/4 teaspoon Seasoned Salt
- ■3/4 teaspoons Salt
- ■ Freshly Ground Black Pepper
- ■1/3 cup Minced Flat-leaf Parsley
- ■4 whole Eggs Beaten
- ■10 slices Thin/regular Bacon
- Sauce:
- ■1-1/2 cup Ketchup
- ■1/3 cup Brown Sugar
- ■1 teaspoon Dry Mustard
- ■ Tabasco To Taste
Pineapple Teriyaki Meatballs:

Meatballs: Combine all ingredients in a large bowl mix well
- Meatballs:
- 2 pounds lean ground beef
- 2 eggs, beaten
- 1/3 cup teriyaki sauce (any brand)
- 2/3 cup dry bread crumbs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- pinch red pepper flakes (optional and only if you want a kick)
- 1 1/2 teaspoon Worcestershire sauce
- 1/4 cup fresh parsley, minced
- 3 tablespoons milk
- 1/4 cup crushed pineapple
- Pineapple Teriyaki Glaze:
- 1/2 cup soy sauce
- 1 1/2 cups water
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/2 cup packed brown sugar
- 2 tablespoons honey
- 1/4 cup pineapple juice
- 3 tablespoons cornstarch
- 1/2 cup cold water
Haricot Vert (green beans like Tahoe Joe's)

Bring a pot of well-salted water to boil
- 1/2 pound of haricot vert, trimmed and tailed
- 2 teaspoon butter
- 1 small shallot, sliced
- Salt and pepper to taste
- 2 tablespoons diced tomato
- Wedge of lemon
- Can add whole cloves of garlic and bacon.
Tortilla and Black Bean Pie

Serve this brightly colored, layered tortilla pie with salsa and sour cream on the side
- 4 flour tortillas (10-inch)
- 1 tablespoon canola oil
- 1 large onion, diced
- 1 jalapeno chile, minced (remove seeds and ribs for less heat)
- 2 garlic cloves, minced
- 1/2 teaspoon ground cumin
- Coarse salt and fresh ground pepper
- 2 cans (15 ounces each) black beans, drained and rinsed
- 12 ounces beer, or 1-1/2 cups water
- 1 package (10 ounces) frozen corn
- 4 scallions, thinly sliced, plus more for garnish
- 8 ounces (2 1/2 cups) shredded Cheddar cheese
Old Fashioned Beef Stew

Heat oil in large pot. Add beef and flour, stirring to coat beef; brown
- 2 tablespoons olive oil
- 2 pounds cubed beef stew meat
- 2 tablespoons all-purpose flour
- 4 cups water
- 2 cups beef broth
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups cubed potatoes
- 2 cups chopped carrots
- 1 teaspoons dried rosemary
- 1 cup fresh corn kernels
- 1 cup fresh green beans, cut into 1 inch pieces
- 1 cup chopped turnip (optional)
- 2 cups chopped fresh tomatoes (optional) I love tomato so I add it.
Lemon Butter Chicken Recipe

Lemon butter chicken is an Italian dish that is very easy to love, but at the time can be very easy to hate
- Lemon Butter Sauce-
- 1/4 cup white wine
- 5 tablespoons lemon juice (freshly squeezed)
- 5 tablespoons heavy cream
- 1 cup butter (chilled)
- salt and pepper (to taste)
- 1/2 lb bow-tie pasta
- 4 boneless skinless chicken breast halves (pounded to an even 1/4” thickness)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/4 cup all purpose flour
- salt and pepper (to taste)
- 4 ounces bacon
- 6 ounces fresh mushrooms (sliced)
- 6 ounces artichoke hearts (drained and halved)
- 2 teaspoons capers (drained)
- Fresh parsley (chopped, for garnish)
Daddy Wu’s Chicken

Preparation In a plastic bag, add chicken and marinade ingredients
- For the marinade:
- 2 pounds chicken breast, cut into 1-inch cubes
- 1 tablespoon soy sauce
- 2 tablespoon sake, xiao shing wine or dry sherry
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 2 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 1 1/2 cups jasmine rice
- 3 cups cold water
- 3 eggs, lightly beaten
- 1 cup flour
- 1/4 cup cornstarch
- For Daddy Wu’s Sauce:
- 2 tablespoons canola oil
- 1/2 red onion, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup ketchup
- 3 tablespoons brown sugar
- 1 teaspoon sake
- 1 teaspoon sesame oil
- 2 tablespoons oyster sauce
- 1/4 cup chicken broth
- 1/4 teaspoon ginger, grated
- Zest and juice of 1 lemon
- 3 scallions, cut on a bias

- Cioppino:
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 clove garlic, chopped
- 1/4 cup white wine
- 1 pound Little Neck clams
- 1/2 pound mussels, scrubbed
- 2 quarts Cioppino Sauce, recipe follows
- 2 dashes Worcestershire Sauce
- Pinch saffron
- 2 to 2 1/2 pound Dungeness crab,
- cooked, cleaned and cracked,
- or 1 pound cooked crab meat
- (preferably Dungeness)
- 1/2 pound medium shrimp, shell on
- 1/2 pound squid tubes, cut in rings
- 1/2 pound firm-fleshed white fish
- fillets cut in 2-inch cubes
- 1/4 pound bay scallops
- Cioppino Sauce:
- 1/2 cup olive oil
- 2 medium onions, halved and thinly sliced
- 6 cloves garlic, chopped
- 3 bay leaves
- 1/2 cup chopped parsley
- 1/4 cup chopped sweet basil
- 1 (28 ounce) can peeled tomatoes, crushed by hand
- 1 (28 ounce) can tomato puree
- 28 ounces water
- 1 tablespoon clam base without MSG, optional
- 1 tablespoon brown sugar
- 1 tablespoon celery salt
- Dash Worcestershire sauce
- Black pepper, to taste
- Crushed red pepper, to taste
- Dash cinnamon
