1 Combine dressing ingredients
- 1 cup mayonnaise
- 2 tablespoons vinegar
- 1 tablespoon mustard
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 lb macaroni, cooked and drained
- 1 cup sliced celery
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 1/2 cup chopped green onion
Cauliflower Buffalo Bites

Roasted Garlic Mushrooms

Preheat the oven to 200C/400F/gas mark 6
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp corn or vegetable oil
- 75 g unsalted butter, softened
- 3 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1 1/2 tbsp lemon juice
- salt and freshly ground black pepper to taste
- 50 g fresh breadcrumbs
Chili-Lime Fried Chicken Wings

Wings: Place the chicken in a 1-gallon re-sealable plastic food storage bag
- Wings:
- 5 pounds chicken wings, separated at joints, and wing tips reserved for stock
- 1 3/4 cups lime juice
- 1 cup buttermilk
- 2 tablespoons minced garlic
- 1 tablespoon plus 1 teaspoon crushed red pepper flakes
- 1 tablespoon kosher salt
- 2 cups all-purpose flour
- 2 tablespoons Essence, recipe follows
- Vegetable oil
- 1 cup honey
- 2 tablespoons lime zest
- Seasoning (Yield 2/3 cup):
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
Fried Green Tomatoes

In a deep-fryer, preheat oil to 350 degrees F
- Oil
- 4 green tomatoes, cut into 1/4-inch rings
- Kosher salt and freshly ground black pepper
- 3/4 cup all-purpose flour
- 1 tablespoon garlic powder
- 4 eggs
- 2 tablespoons milk
- 1 1/2 cups panko bread crumbs
- Pinch cayenne pepper
- Pinch paprika

Toss green beans on a baking sheet with smashed garlic cloves, water and olive oil
- 1 pound green beans
- 6 smashed garlic cloves
- 1/4 cup water
- 1 tablespoon olive oil
- 2 teaspoons each taragon and whole-grain mustard
- salt and pepper
Crock Pot Beer Chicken

1.Place all ingredients in the crock pot, and cook on high for 4-5 hrs, or low for 6-8 hrs
- 2 lbs skinless, boneless chicken breasts (I used 8 breasts, 4oz ea)
- 1 bottle or can of your favorite beer (I used Guinness)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tbsp dried oregano
- 1/2 tsp black pepper
Fresh Tomato Sandwiches

1. Lightly toast bagel thins
- 2 whole wheat bagel thins, split
- 1 tablespoon light mayonnaise
- 1/3 cup part-skim shredded mozzarella cheese
- 1/4 cup part-skim ricotta cheese
- 1 teaspoon snipped fresh dill or 1/4 teaspoon dried dill
- 2 - 3 roma tomatoes, sliced (you can also use other varieties such as yellow, green, red, or purple heirloom tomatoes)
- 1/4 cup red onion cut into thin wedges and separated into pieces
- Dash garlic powder
- 2 teaspoons grated Parmesan cheese
- Fresh dill (optional)
