Potato and Pancetta Pizza

For potatoes: Preheat oven to 425 degrees
- Potatoes
- 2 to 4 medium Yukon Gold potatoes, cut in wedges
- 4 cloves garlic, left in skins
- 1/4 tbsp. chopped fresh rosemary leaves
- 1 1/2 tbsp. extra virgin olive oil
- Kosher salt and freshly ground pepper, to taste
- Pizza
- 1 store-bought or homemade 12-inch pizza crust
- 4 oz. mozzarella cheese
- 1/2 oz. Crescenza cheese (can substitute with burrata cheese or any soft, fresh cow's milk cheese)
- 2 oz. pancetta
- 1 oz. cooked Yukon Gold potatoes (see recipe above)
- Rosemary oil, to drizzle
Braised Short Ribs

Salt and pepper ribs, then dredge in flour
- ■8 whole Beef Short Ribs
- ■ Kosher Salt and Pepper To Taste
- ■1/4 cup All-purpose Flour
- ■6 pieces Pancetta, Diced
- ■2 Tablespoons Olive Oil
- ■1 whole Medium Onion, Diced
- ■3 whole Carrots, Diced
- ■2 whole Shallots, Peeled And Finely Minced
- ■2 cups Red Or White Wine
- ■2 cups Beef Or Chicken Broth (enough To Almost Cover Ribs)
- ■2 sprigs Thyme
- ■2 sprigs Rosemary
Lemony Red Lentil Soup with Fried Shallots

In a large heavy pot, warm the oil over medium-high heat
- 2 Tablespoons olive oil
- 1 yellow onion, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Pinch of red pepper flakes
- 1 cup split red lentils, picked over and rinsed
- 1 carrot, peeled and finely chopped
- 1 tomato, peeled, seeded and chopped
- 4 cups vegetable broth
- Salt and freshly ground pepper
- Juice of 1/2 lemon plus 1 lemon cut into 4 wedges
- Fried shallots
Pork Chili Verde

- 3 3/4 pounds lean diced pork
- 3/4 (28-ounce) or 1 (21-ounce) can green enchilada sauce
- 1/3 bunch fresh cilantro, leaves chopped
- 1/3 large onion, chopped
- 1/3 bunch green onions, chopped
- 1 fresh jalapeno, seeded and chopped
- 1 1/2 ounces canned green diced chiles
- Garlic powder, to taste
- Freshly ground black pepper

In a small bowl, mix together the first 4 ingredients
- barbecue sauce - 2 tbsp, hickory
- molasses - 1/2 tbsp, (I use black treacle)
- honey - 1 tbsp
- hoisin sauce - 2 tbsp
- black beans - 1 15 ounce can (about 2 cups), drained
- brown rice - 2 cups, cooked and diced,
- oat bran - 3 tbsp
- corn starch - 2 tbsp
- all-purpose flour - 1 tbsp
- onion - 2 tbsp, finely chopped
- beets - 2 tbsp canned, finely chopped
- beet juice - 2 tsp
- chili powder - 1 tsp
- cumin - 1/2 tsp, ground
- black pepper - 1/4 tsp
- kosher salt - 2 tsp
- jalapeno - 2 tbsp pickled, chopped
