- FOR THE CROUTONS, ROLL OUT:
- 1 sheet purchased puff pastry, thawed
- 1 egg
- 1 Tbsp. water
- SPRINKLE:
- Salt, paprika, and grated Parmesan
- FOR THE SOUP, SWEAT:
- 1 cup diced onion
- 1 cup diced celery
- 1 cup quartered button mushrooms
- 1/2 cup diced carrot
- 2 tsp. minced garlic
- 4 Tbsp. unsalted butter
- 1 1/2 cups diced red-skinned potatoes
- 1/4 cup all-purpose flour
- DEGLAZE:
- 2 Tbsp. dry sherry
- 5 cups chicken broth
- 2 cups shredded cooked chicken
- 2 Tbsp. chopped fresh thyme
- 1/2 tsp kosher salt
