Millet and Black Bean Salad

Millet and beans go so well together, This salad is so wonderful
- Dressing:
- 2 cups Millet, cooked, chilled
- 3 cups black beans, cooked, chilled
- 1/2 cup fresh cilantro, chopped
- 1-2 pints red and yellow cherry tomatoes, halved
- 1/2 of a red onion
- 1/2 of a large red bell pepper
- 1/2 of a large orange bell pepper
- 4 cobs of fresh corn, roasted and corn kernels cut off the cob, to roast corn place under the broiler
- Or place in 400 degree oven until corn browns.
- 1 zucchini, small diced
- 2 to three tablespoons Roasted paprika I love Penzeys
- 1/4 cup Flax oil
- 1/3 cup White balsamic vinegar
- 1/3 cup Extra Virgin Olive Oil
- Pinch of Salt and Pepper

- 1 1/4 c milk
- 3 large eggs
- 1/2 tsp kosher salt
- 1 tbsp butter, melted
- 1 1/4 c all-purpose flour
- 2 tbsp butter, cut into 6 even pieces
Almond Tarts

These tasty little tarts, with their sweet, ground almond filling, are a wonderful finish to a light summer meal
- Crust:
- 1/2 cup sugar
- 1/2 cup (8 tablespoons) soft butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 3/4 cup almond flour or finely ground sliced or slivered almonds
- Filling:
- 1/4 cup (4 tablespoons) soft butter
- 1/4 teaspoon salt
- 1 cup sugar
- 2 tablespoons King Arthur Unbleached All-Purpose Flour
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 1/4 cups almond flour or finely ground sliced or slivered almonds
- Glaze:
- 1 cup glazing sugar or confectioners' sugar
- 2 tablespoons milk
- raspberries, for garnish
Spelt Savory Cheese & Herb Scone

- 3 cups spelt flour
- 1 T. baking powder
- 1 T. sugar
- 2 t. salt
- 1/2 cup finely chopped fresh chives
- 5 oz. grated sharp cheddar cheese
- 2 cups buttermilk + additional
Warm Steak and Potato Salad

Drizzle the steak with vegetable oil and very liberally, season the steak with salt and pepper, to taste
- Sour Cream-Bacon Dressing:
- 8 ounces boneless sirloin (1 1/2-inches thick) or other well-priced steak
- 1 tablespoon vegetable oil
- Kosher salt and freshly ground black pepper
- 2 cloves garlic, minced
- 1 tablespoon extra-virgin olive oil
- 6 medium red potatoes, quartered
- 1/4 cup grape tomatoes, halved
- 1 head red leaf lettuce, washed, dried and leaves torn into bite-size pieces
- 1/4 cup shredded Cheddar cheese
- 1 teaspoon Dijon mustard
- 2 tablespoons red wine vinegar
- 2 tablespoons sour cream
- 1/2 teaspoon garlic powder
- 1/4 cup extra-virgin olive oil
- 2 strips bacon, cooked until crisp and then chopped
- 2 green onions, chopped
- Kosher salt and freshly ground black pepper
My Big Fat Creamsicle Meringues

Make the meringue: Preheat the oven to 225 degrees Fahrenheit (107 degrees Celsius)
- For the Meringues:
- 4 egg whites, at room temperature
- 1/4 teaspoon salt
