The Perfect Thanksgiving Turkey (brined and hickory smoked)
- For the brine:
- Advanced preparation: 16 hours for brining the turkey
- 1 , 12 pound turkey
- 1-1/4 cups salt
- 1 quart hot water
- 4 quarts cold water
- 1 cup maple syrup
- 1 medium onion, thinly sliced
- 4 cloves garlic, peeled and crushed with the side of a cleaver
- 10 peppercorns
- 5 bay leaves
- 4 strips lemon zest
- 2 cloves
- For the basting:
- 4 to 6 tablespoons melted salted butter
- Maple Red Eye Gravy:
- 2 cups turkey drippings
- 1 to 2 cups chicken or turkey stock
- 3 tablespoons butter
- 3 tablespoons flour
- 1/4 cup Madeira wine
- 1/4 cup coffee
- 1/4 cup heavy cream
- 2 tablespoons maple syrup
- coarse salt (kosher or sea) and freshly ground black pepper to taste
Homemade Teriyaki Sauce

- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 1/2 teaspoons fresh ginger, minced
- 1 teaspoon garlic, minced
- 1 tablespoon honey (Vegans: use agave nectar)
- 1 teaspoon sesame oil
- 3 tablespoons mirin (see note)
- 1/4 cup water mixed with 3 teaspoons cornstarch
