Makes 8 mini cakes, Makes 12-16 cupcake stacks or 1 3-layer cake
- For the Cake:
- 1/2 cup natural unsweetened cocoa powder
- 1 cup lukewarm water, divided
- 1/2 cup buttermilk
- 1 1/2 cups cake flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup (1 stick) unsalted butter
- 2 large eggs, at room temp, beaten to blend
- For the Coconut-Almond Filling:
- 1 1/2 cups slivered almonds (reserve 1/2 cup for garnish)
- 3/4 cup cream
- 3/4 cups sugar
- Pinch salt
- 2 teaspoons vanilla extract
- 3 cups sweetened shredded coconut
- For the Frosting:
- 1 cup heavy cream
- 2 tablespoons confectioner’s sugar
- 1/2 teaspoon almond extract

For the crust: Preheat the oven to 350 degrees F

- 20 chocolate wafer cookies
- 3 tablespoons unsalted butter, melted
- 1 tablespoon sugar

- 8 ounces semisweet chocolate, finely chopped

- 4 ounces bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 teaspoon light or dark corn syrup
- 2 tablespoons sour cream, at room temperature
