County Fair Funnel Cake

In a bowl, combine the eggs, milk and brown sugar
- 2 eggs, lightly beaten
- 1 1/2 cups milk
- 1/4 cup packed brown sugar
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- Oil for deep-fat frying
- confectioners' sugar
Snickerdoodle Blondies

1. Preheat oven to 350 degrees and spray a 8 x 8 inch baking pan
- Snickerdoodle Blondies
- (makes 12 bars)
- 1/2 C butter, room temperature
- 1 C sugar
- 1/4 tsp salt
- 1 large egg, room temperature
- 1 1/2 tsp vanilla
- 1 C flour
- 1 Tb sugar + 1/2 tsp cinnamon
- 3/4 tsp. cream of tarter
Better Baking Tips

Should you have bubbles in your batter after you pour it into the pans, gently tap the pans on your countertop
- Eggs and dairy products (butter, buttermilk or milk) should be at room temperature before going into the batter. If they are too cold, especially the butter, the cake volume will be reduced.
- to 3/4 2 1 forgiving flour that helps to ensure velvety soft cakes. If you need a substitute, use 3/4 cup all-purpose flour and 2 tablespoons cornstarch for each 1 cup flour.
- to mix the sifted flour mixture into the batter all at once. Add it a little at a time alternately with the buttermilk or milk. Be sure to begin and end with the sifted flour mixture.
- 1-cup of pouring the batter into the cake pans, use a soup ladle or a 1-cup measuring cup so you can count the number of scoops per pan. This ensures that you get equal amounts of batter in each pan and end up with cake layers that are the same height.
Marshmallow Creme Meringue

- 3 egg white
- 1 7 oz. jar of Marshmallow Creme
Betty Wason's Basic Pot Roast

1. Season the flour with the salt and pepper and pound the mixture into the meat with the edge of a plate
- Serves 6 to 8
- 1/4 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 5 pounds rump of beef (or other roast suitable for slow-cooking, such as chuck)
- 2 to 3 tablespoons fat or oil
- 2 onions, sliced, or 10 to 12 small onions, peeled
- 1 to 2 carrots, scraped and cubed
- Herbs and seasonings, as desired (we used bay leaf and thyme)
- 1 cup liquid (wine, bouillon, tomatoes, vegetable broth, etc.)
- Other vegetables, as desired (we used baby red potatoes)

- 1 cup butter
- 1 1/2 cups diced (1 inch) sweet potato (about 7 ounces)
- 1 tablespoon salt
Lemon Ice Box Pie

Mix egg yolks with condensed milk and lemon juice
- 1 can Eagle Brand® condensed milk
- 1/2 cup lemon juice (from fresh lemons)
- 3 eggs - separated. Save aside egg whites for the meringue
