Tilapia with Honey Dressing

In a small bowl, whisk together first 6 ingredients (lemon juice through sesame oil)
- 2 1/2 tablespoons lemon juice
- 2 tablespoons chopped green onions
- 1 tablespoon honey
- 1 tablespoon low sodium soy sauce
- 1 teaspoon grated gingerroot
- 1/4 teaspoon sesame oil
- 1 tablespoon canola oil
- 4 (6-oz.) tilapia fillets
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 4 cups mixed salad greens
Shrimp Scampi

Chicken Tortillas with Whole-Wheat Tortillas

- 6 T. freshly squeezed lime juice (about 4 limes)
- 2 T. canola oil
- 1 whole green onion, very finely chopped
- 1 clove garlic, minced
- 1/2 t. dried oregano
- 3/4 t. chile powder, or to taste
- Salt and freshly ground pepper, to taste
- Fajitas:
- 2 (6 ounce) boneless skinless chicken breasts
- 1 ripe avocado (preferably Hass)
