P. F. Chang's Chicken Lettuce Wraps

- 3 tablespoons oil
- 2 boneless skinless chicken breasts
- 1 cup water chestnut
- 2/3 cup mushroom
- 3 tablespoons chopped onions
- 1 teaspoon minced garlic
- 4 -5 leaves iceberg lettuce
- 1/4 cup sugar
- 1/2 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons ketchup
- 1 tablespoon lemon juice
- 1/8 teaspoon sesame oil
- 1 tablespoon hot mustard
- 2 teaspoons water
- 1 -2 teaspoon garlic and red chile paste
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon rice wine vinegar
Apple Tarte Tatin

Preheat the oven to 400 degrees F
- 3 Granny Smith apples, peeled, cored and each sliced into 12 to 16 thin wedges
- 1 cup sugar
- 1 teaspoon lemon juice
- 1 stick unsalted butter
- 1 sheet frozen puff pastry, thawed and chilled
- Ginger or cinnamon gelato or whipped cream, for serving
Mexican stuffed jalapenos Recipe

1. Cut jalapenos in half, rib and seed them
- 10 Jalapenos
- 1/2 cup shredded mexican blend cheese
- 1/2 cup shredded italian blend cheese
- 1 cup cream cheese
- 1 tbspn fresh minced garlic
- 12oz chorizo
- 1/2 cup onion fine chop
- pinch of fresh cilantro fine chop
- Juice of 1 lime
Sandy's Spiced Wine

Combine all ingredients in a large pot
- 2 bottles red wine
- 2 tablespoons light brown sugar
- 1 1/2 teaspoons pumpkin pie seasoning
- 2 oranges, sliced
- 2 cinnamon sticks
- 1/4 cup raisins
Super Fast Salsa

Combine ingredients in the food processor
- 1 clove garlic, chopped
- 1/4 yellow onion, chopped
- 1 (10 ounce Rotel) can diced tomatoes & green chilies, undrained (use mild if you don’t like it hot)
- 1/2 cup cilantro leaves, with some tender stems
- juice of 1 lime
- salt, to taste
Minty Greek Salad

In a large bowl, combine the feta cheese, tomatoes, olives and cucumbers
- 2 cups feta cheese, crumbled
- 24 grape tomatoes, halved
- 16 pitted black olives, such as kalamata
- 16 pitted green olives
- 1 English cucumber, cut into chunks
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- Pinch of salt and pepper
- 1 tablespoon chopped fresh mint
Green Chile and Cheese Egg Muffins

(Makes 12 egg muffins, recipe created by Kalyn
- 12 eggs
- one 4 oz. can diced green chiles (or use half the can if you want them less spicy, but now I always use the whole can; be sure to use Anaheim chiles, not jalapenos)
- 1 1/2 about 1 1/2 cups grated low-fat cheese (I use Four Cheese Mexican Blend)
- 2 T half and half, or milk (optional, now I rarely use this)
- 1 tsp. Spike Seasoning (optional, but recommended; f you don't have Spike use your favorite multi-purpose seasoning.)
- salt and fresh ground black pepper to taste

- 1 package (6-ounce) low-fat vanilla yogurt
- 1/3 cup calcium-fortified frozen orange juice concentrate
