Brown Butter Risotto with Lobster

Bring a medium saucepan of salted water to a boil over medium-high heat
- 1 pound (about 2 medium) frozen lobster tails, thawed
- 4 1/2 cups reduced-sodium chicken stock
- 4 tablespoon butter, at room temperature
- 1 cup finely chopped onion
- 1 1/2 cups Arborio rice
- 1/2 cup brandy
- 1/2 cup grated Parmesan
- 1/4 cup chopped fresh chives
- Kosher salt and freshly ground black pepper
S'mores Pudding Pie

For the crust: Preheat the oven to 325 degrees F
- Graham Cracker Crust:
- 1 1/2 cups crushed graham crackers (about 10 crackers)
- 7 tablespoons unsalted butter, melted
- 2 tablespoons light brown sugar
- Chocolate Pudding:
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- Pinch salt
- 1/4 cup cornstarch
- 4 ounces bittersweet chocolate, finely chopped

- 1 package House Foods Tofu Shirataki Fettuccine Shaped Noodle Substitute
- 4 oz. raw boneless skinless chicken breast, cut into bite-sized pieces
- 1/8 tsp. each salt and black pepper, or more to taste
- 1/8 tsp. garlic powder
- 1/2 cup sliced mushrooms
- 1/2 cup chopped onion
- 1/2 tsp. chopped garlic
- 1 tbsp. fat-free mayonnaise (like the kind by Kraft)
- 2 tsp. reduced-fat Parmesan-style grated topping (like the kind by Kraft)
- 1 wedge The Laughing Cow Light Creamy Swiss cheese
- 2 cups chopped spinach leaves

- 1/4 cup pizza sauce

Amazing Whole Wheat Pizza Crust

Directions In a large bowl, dissolve sugar in warm water
- 1 teaspoon white sugar
- 1 1/2 cups warm water (110 degrees F/45 degrees C)
- 1 tablespoon active dry yeast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 cups whole wheat flour
- 1 1/2 cups all-purpose flour
Red Beans & Rice Recipe

Mix together the Holy Trinity (Onions, Celery, Bell Pepper)
- 1 Tbsp Unsalted Butter
- 2 Tbsp Creole Seasoning
- 1 Cup Onion, chopped
- 1/2 Cup Bell Pepper, chopped
- 1/4 Cup Celery, Chopped
- 1 Cup Andouille Sausage, Cubed
- 1 Cup Tasso, Cubed
- 1/2 lb. Small Red Beans (soaked overnight or for at least a few hours)
- 1 Tbsp Fresh Garlic, Minced
- 3 1/2 Cups Chicken Stock (You could certainly use water)
- 3 Fresh Bay Leaves
- 1 tsp Red Wine Vinegar (When I don’t use Pickle Meat, I add a little vinegar because I like the flavor it lends. Pickle Meat makes wonderful Red Beans by the way; recipe forthcoming.)
- 1/2 Cup Tomato Sauce (I learned this from Louis Armstrong’s Recipe)
- 1 Tbsp Italian Parsley, Finely Chopped
- 1/4 Cup Green Onions, thinly sliced on the bias
- 1/2 Recipe Creole Boiled Rice
Tortilla Soup Recipe

Heat the oil over medium heat in a dutch oven or large saucepan
- Garnish:
- 2 Tbsp Vegetable Oil or Lard
- 1 Cup Chopped Spanish Onion
- 1 Tbsp Chopped Garlic
- 2 Tbsp Chopped Jalapeno
- 1 Cup Chopped Fresh Tomato
- 16 Corn Tortilla Chips (as described above)
- 1 Bay Leaf
- 1 dried Guajillo chile
- 1 dried Ancho chile
- 4 Cups Rich Chicken Stock
- 2 Tbsp Chopped Fresh Oregano
- 1 Cup Raw Chicken cut into bite sized pieces, I use thighs
- (Toss the Chicken with 1 Tbsp Chopped Cilantro and the Juice of 1/2 Lime)
- Kosher Salt and Black Pepper to taste
- Tortilla Strips
- 1/2 Large Avocado or one whole small (Diced just before serving)
- 3 Tbsp Chopped Cilantro
- 4 Tbsp Finely Diced Fresh Tomato
