Southwest Oven-Baked Omelette

Preheat oven to 375 degrees
- 2 1/2 cups fat-free liquid egg substitute (like Egg Beaters Original)
- 1/2 cup fat-free milk
- 1 tsp. cumin
- 1/2 tsp. taco seasoning mix
- 1/2 cup chopped onion
- 1 tsp. chopped garlic
- 1/2 cup chopped red bell pepper
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup canned sweet corn, drained
- 1/4 cup canned diced green chiles
- 1/2 cup shredded reduced-fat Mexican-blend cheese
- Optional toppings: salsa, fat-free sour cream, chopped scallions
Crispy Onion Rings

Peel and slice the onions into about ¾-inch wide slices
- 2 whole Yellow Onions (Medium To Large Size, Round Shaped)
- 2-1/2 cups Buttermilk
- 3 teaspoons Hot Sauce (or Tabasco Sauce)
- 2 dashes Salt (or Salt To Taste)
- 1/4 teaspoons Ground Black Pepper
- 2 cups Whole Wheat Pastry Flour
- 2 teaspoons Ground Red Pepper

Spray a large pot or Dutch oven with non-fat cooking spray and set over medium high heat
- 1 lb of boneless, skinless chicken breasts ( I used 4, 4oz breasts)
- 1 large onion, finely chopped
- 3 small red potatoes, peeled and diced
- 1 28oz can of diced tomatoes
- 4 large garlic cloves, minced
- 1-2 cups fat free chicken broth
- 1 cup green olives, pitted
- 3 tbsp capers, rinsed
- 1/4 cup fresh parsley, finely chopped
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- Juice from 1 lemon, fresh squeezed
- Zest from 1/2 lemon
- Salt and pepper to taste
Poblano Stuffed with Chorizo, Shrimp and Rice

In a medium saucepan, heat oil and chorizo, cook for 3 minutes
- 1 tablespoon oil
- 1/2 pound Mexican-style chorizo
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 jalapeno, minced
- 1 red onion, diced
- 2 tablespoons garlic, minced
- 1 cup short-grain rice
- 1 cup low-sodium chicken stock
- 1/2 cup white wine
- 1/2 cup water
- 4 large, fresh poblano chiles
- 1 pound shrimp, shelled, cut into 1/2-inch pieces
- 3/4 cup Cheddar, shredded

- 1 cup melted margarine (or use half margarine and half coconut oil; do not use margarine that has water as the first ingredient)
- 7 T cocoa powder
- 4 eggs, well beaten
- 2 cups of sugar, Splenda, or Stevia in the Raw (use Splenda or Stevia for South Beach Diet)
- 1/2 cup brown sugar (optional, but recommended if you're using Splenda or Stevia, or use another 1/2 cup sweetener)
- 1 1/3 cups white whole wheat flour

- 2 tsp. vanilla
