Add a small amount of olive oil to a medium sauce pan; heat on medium high
- 1 cans black-eyed peas, drained
- 1 can corn, drained
- 1 head cauliflower, steamed and drained
- 1 large onion, finely chopped
- 1 can chopped green chilies, drained
- 3 eggs, slightly beaten
- 1-2 cups crushed Ritz crackers

- 4 ripe, Fresh California Avocados, seeded and peeled

- 1/8 teaspoon ground cumin

- 2 large carrots (or other vegetable of choice), peeled
- 3/4 cup apple cider vinegar or white wine vinegar

- 2 tbsp honey
- 2 tsp sea salt flakes or kosher salt

Bring the roast to room temperature by removing it from the refrigerator 30 minutes before cooking
- Ingredients:
- 1 2-1/2 to 3-pound boneless pork sirloin roast
- For the rub:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh garlic, finely chopped
- 1-1/2 teaspoons kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1-1/2 teaspoons fresh sage, chopped
