  • 1 cup corn, thawed if frozen and drained by pressing against a strainer.
  • 1 cup frozen green peas, thawed if frozen and drained by pressing against a strainer.
  • 1-1/2 cups mashed yams, mashed with an egg*
  • 1 egg
  • 1 cup roasted sweet onion, chopped
  • 1-2 cloves roasted garlic, chopped
  • 1-1/2 cups whole wheat panko bread crumbs
  • 16 ounces mushrooms, diced and cooked until quite dark*
  • 1 cup cooked freekeh
  • 2 cups fresh spinach, chopped
  • Shredded cheddar cheese
