Cook pasta according to package directions
- 1 package (16 oz) linguine (try rice pasta or quinoa pasta)
- 1 cup pine nuts
- 5 large cloves garlic, minced
- 1/2 c. + 1/4 c. olive oil
- 3/4 c. grated parmesan cheese
- 3/4 tsp dried red pepper flakes
- 12 oz washed and trimmed spinach leaves, coarsely chopped
- 3/4 cup loosely packed chopped, fresh basil
Eggless Raw Salad - The Blue Zone

Pulse the cauliflower in processor and set aside in large mixing bowl
- 3 cups cauliflower
- 1/2 cup sunflower seeds, soaked for 4 hours, drained, then pulsed in food processor
- 1 cup celery, diced
- 1 cup carrots, shredded
- 1/2 cup scallions or 2 T diced red onion or shallot
- 1/2 cup nutritional yeast
- 2 tsp dried sage
- 1 T dried parsley
- 1/2 tsp garlic powder
- 1/4 tsp turmeric
- 4 T tahini
- 4 T yellow mustard
- 2 T Dijon mustard
- 4 T relish
- 1 T chia seeds
- 1 tsp black salt (or sea salt)
- 1 / to 1 tsp black pepper
- 1/2 cup water
Baked Sweet Potato Fries (SD)

Preheat the oven to 425 degrees
- 1 lb sweet potatoes (cut into strips, with skin)
- 1/4 cup olive oil
- 1/2 tsp kosher salt
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp curry powder (optional)
Remoulade Sauce

Mix all the ingredients together in a medium bowl
- 1 1/4 cups mayonnaise
- 1/4 cup mustard (Creole mustard if possible)
- 1 Tbsp sweet paprika
- 1-2 teaspoons Cajun or Creole seasoning
- 2 teaspoons prepared horseradish
- 1 teaspoon pickle juice (dill or sweet, your preference)*
- 1 teaspoon hot sauce (preferably Tabasco)
- 1 large clove garlic, minced and smashed
- If you don't have any pickle juice on hand, use a little lemon juice or vinegar.
Vegetarian Reuben with Spinach, Mushrooms, and Russian Dressing

Prepare Russian dressing: Whisk mayonnaise and ketchup in a small bowl until smooth

- 1/2 bottle sweet and sour sauce (or to taste)
