- 1 (5-pound) chicken, organic if possible, cut into 8 pieces, breasts cut in 1/2 crosswise
- Salt and freshly ground black pepper
- 1/4 cup canola oil, divided
- 1 whole onion, peeled and quartered
- 2 whole carrots, washed and chopped into large pieces
- 3 stalks celery, washed and chopped into large pieces
- 4 cloves garlic, smashed and peeled

- 1 tablespoon dried savory
- 1 bay leaf
- 1 large carrot, diced
- 1/2 medium onion, diced
- 1 stalk celery, diced
- 1 tablespoon minced garlic
- 1/2 teaspoon red chili flakes
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 1 cup heavy cream
- 2 cups all-purpose flour
- 4 teaspoons baking powder
- 4 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon granulated garlic
- 2 tablespoons dried savory
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon white pepper
- 1 cup buttermilk
- 1 egg
- 1/4 cup butter, melted
Caramel Snack Mix

Preheat oven to 275 degrees F (135 degrees C)
- 1/2 cup butter
- 3/4 cup white corn syrup
- 1 cup packed brown sugar
- 1 cup chopped pecans
- 1 cup almonds
- 1 (12 ounce) package crispy corn and rice cereal
Apple Fritters with Peanut Butter Caramel Sauce

Mix the wet: In a bowl, stir together the apples, sugars, pumpkin pie spice, allspice and nutmeg
- 2 Granny Smith or Golden Delicious apples, peeled, cored and chopped
- 1/4 cup brown sugar
- 2 tablespoons granulated sugar
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon allspice
- 2 to 3 scrapes of fresh nutmeg on a rasp

- 7 ounces beer (Coronita is the perfect size!)

- 4 wedges light spreadable Swiss cheese (recommended: The Laughing Cow), room temperature
- 1/4 cup shredded fat-free Cheddar cheese
- 16 low-fat baked tortilla chips
- 1 teaspoon dry taco seasoning mix
- 4 (5-ounce) raw, boneless, skinless lean chicken breast cutlets, pounded to 1/3-inch thickness
- Salt and freshly ground black pepper
- 1/4 cup taco sauce
- Fat-free sour cream, for topping, optional
