Potato Cakes

1 Beat the egg. 2 Mix the beaten egg with the mashed potatoes
- 1 egg
- 1 cup mashed potatoes (left over)
- 1/3 cup flour
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 onion (finely chopped)
- 1/2 pepper (finely chopped) any color
- 1 jalepheno (finely chopped)
- 1/2 cup shreded cheese
- 1 -2 tablespoon milk
- 2 tblsp butter @ 2 tablespoons olive oil
Crackers (Seasoned)

Preheat the oven to 275 degrees F
- 1 stick butter
- 1 teaspoon Italian seasoning
- 1/2 teaspoon seasoned salt
- 1 sleeve saltine crackers (one-quarter of a 1-pound box)
Almost-Famous Chimichangas

Preheat the oven to 450 degrees F
- 2 tablespoons unsalted butter
- 4 tablespoons vegetable oil
- 1 white onion, chopped
- 3 cloves garlic, chopped
- 1 jalapeno pepper, diced (remove seeds for less heat)
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- Kosher salt
- 1 small tomato, chopped, plus more for topping
- 2 tablespoons chopped fresh cilantro
- 2 1/2 cups shredded rotisserie chicken
- 1/4 cup sour cream
- 1 15 -ounce can refried beans
- 4 10 -inch flour tortillas
- 1 cup shredded monterey jack cheese, plus more for topping
- Mexi-sauce, for topping (see below)
- Shredded lettuce, for topping

Italian Stuffed Jalapenos

Preheat oven to 350 degrees F and set a rack in the middle of the oven
- 15 jalapenos, preferably red, cut in 1/2, seeded and deveined
- 1 tablespoon canola oil
- 2 pounds mild Italian sausage, casings removed
- 1/4 cup minced onion
- 1/4 cup minced red bell pepper
- 3 tablespoons minced garlic
- 2 cups cream cheese
- 1/4 cup grated Parmesan, plus more for garnish
- Salt and pepper
- 1/2 cup shredded mozzarella cheese
Sweet Potato Souffle

- 3 pounds sweet potatoes, peeled and cubed
- Salt
- 1 (4.5-ounce) can evaporated milk
- 1/2 cup brown sugar
- 5 tablespoons unsalted butter, melted

Chicken Lasagna

I played around with this lasagna a bit by adding 1/2 brick cream cheese and about 1c parmesan to the sauce (2 cans...
- 2 (12 oz) cans evaporated milk (not fat-free)
- 1 (1 oz) pkg. dry Ranch dressing mix
- 3 C. cubed, cooked, chicken
- 1/8 tsp pepper
- 1 (16oz) lasagna noodles, cooked (I recommend reducing it to 8 oz to 12 oz)
- 1 1/2 to 2 C cheddar cheese, grated
- 1 1/2 to 2 C mozzarella cheese, grated

1.Pour the water into the bowl of an electric stand mixer and sprinkle with the yeast
- 2 cups water (110° F)
- 2 packages, active dry yeast
- 3 tablespoons sugar
- 3 teaspoons table salt
- 5 1/2 cups unsifted all-purpose flour (approximately I used 5 1/4)
- 12 quality all-beef hot dogs
- 2 teaspoons baking soda
- 1 egg yolk plus 1 tablespoon water, lightly beaten

- 10 corn tortillas, cut into 1-inch strips
- All-natural olive oil cooking spray
- 2 tablespoons Spice Blend, recipe follows
- One 15-ounce can diced fire-roasted tomatoes or diced tomatoes with green chilies
- One 15-ounce can black beans, rinsed and drained
- 1 1/2 pounds cooked chopped beef brisket
- 1 1/2 cups shredded pepper jack cheese
- 1 cup shredded sharp white Cheddar
- 4 to 6 large or jumbo organic eggs (1 per person)
