Rolled Stuffed Turkey Breast

- 1 boneless skinless turkey breast half (2-1/2 pounds)
- 1 small onion finely chopped
- 1 clove garlic finely chopped
- 1 bunch chopped spinach
- 1/2 cup shredded Parmasean cheese
- 1/3 cup crasions
- 1/3 cup finely chopped apricots
- 1-2 tablespoons EVOO
- 1/4 teaspoon each salt and pepper

Pork Chops Stuffed with Feta and Spinach

- 3 tablespoons (1 1/2 ounces) block-style fat-free cream cheese
- 1/2 teaspoon grated lemon rind
- 4 (4-ounce) boneless center-cut loin pork chops, trimmed
- 2 tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- 1/4 teaspoon dried oregano
