Ahi Poke Avocado

Add all ingredients together, cover and let this marinade in the refrigerator until you're ready to serve with chop
- Optional:
- 1 pound tuna sashimi, sliced in 1/2 inch squares
- 2-3 stalks of green onions, chopped
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame seed oil
- Sprinkle of sesame seeds
- salt and pepper to taste
- sugar to taste (optional)
- 1 ripe avocado, cubed
- Cherry tomatoes
- 1 cucumber, sliced
Tako Poke Korean Style

Cut ogo in 2-inch lengths
- Korean-Style Tako Poke
- (From "The Choy of Cooking")
- 2 pounds fresh ogo (edible seaweed)
- 1 pound tako (octopus)
- 1 Maui onion, diced
- 1/2 cup chopped green onion
- 1 cup rice vinegar
- 1/2 cup soy sauce
- 1/2 cup sugar
- 3 tablespoons roasted sesame seeds
- 2 tablespoons bottled Korean kochu jang (hot chile paste), available in Asian markets and the Asian section of supermarkets
- 1 teaspoon minced fresh ginger
- 2 cloves garlic, minced
Artichoke & Parmesan Dip

1. Place the artichoke hearts, mayonnaise, scallions, and garlic in a blender container
- 1/3 cup oil-marinated artichoke hearts, drained
- 1/4 cup mayonnaise
- 2 Tbs. sliced scallions (white and green parts)
- 1 clove garlic, minced
- 1/4 cup plain yogurt
- 1/4 cup grated parmesan cheese
- 1/4 tsp. ground black pepper
Watercress Soup

Rather than using broth to help flavor this soup, we've turned to ground fenugreek, a spice found in curry powders
- 2 tsp. canola oil
- 1 small onion, chopped (1 cup)
- 2 cloves garlic, minced
- 1/2 tsp. ground fenugreek
- 2 medium russet potatoes, peeled and diced
- 2 sprigs fresh thyme
- 4 cups watercress leaves (4 oz.), plus 4 sprigs for garnish
- 1/2 cup low-fat buttermilk, optional
Creamy Chipotle Dressing

- 1/4 tsp. whole coriander seeds
- 1 cup prepared salsa
- 1 cup vegan mayonnaise
- 1 chipotle chile in adobo sauce, drained and diced

- 1/3 cup paper-thin slices garlic
- 8 cups tomato chunks (about 3 pounds)

One Pot Pasta Primavera

This easy recipe lends itself to endless variations
- 3 Tbs. olive oil
- 3 cloves garlic, minced (1 Tbs.)
- 1 tsp. grated lemon zest
- 8 oz. fusilli pasta
- 2 small yellow squash, halved and cut into 1/2-inch-thick slices
- 1 medium orange bell pepper, cut into 1-inch pieces
- 8 oz. small broccoli florets (3 cups)
- 2 cups halved cherry tomatoes
- 8 green onions, thinly sliced (1/2 cup)
- 1/2 cup torn fresh basil leaves
- Grated Parmesan cheese for garnish, optional

- 16 to 18 ounces cheese ravioli (fresh or frozen)
- 1 tablespoon olive oil
- 1 shallot, chopped
- 3 summer squash (zucchini and/or yellow squash; about 1 1⁄2 pounds), thinly sliced
- kosher salt and black pepper
- 3/4 cup heavy cream
- 1 tablespoon grated lemon zest
- 1/2 cup grated pecorino or Parmesan (2 ounces), plus more for serving

Southwest Corn and Black Bean Dip

- 1/2 cup cooked black beans (cooked from dry; or canned, drained)
